At HSS we are looking for a skilled and experienced Cooks to prepare delicious meals according to menu in one of the most luxurious hotels in Orlando/Kissimmee, FL area.
The Prep Team Cook will be responsible for executing and maintaining bulk mise in place production for the restaurant outlets (i.e stocks, sauces, vegetable cuts, blanching, precooking, etc.) within the hotel. This position will be involved in building inventory lists, as well as a strategic overview of preparation. The candidate must have experience with large equipment such as a tilt skillet, tilt kettle, combi-oven, blast chiller, griddle, grill and fryer. Advanced knowledge of knife cuts, cooking temperatures, food safety & sanitation are a must. Production levels will differ in the outlets depending on occupancy, events, and overall need of the resort. Must maintain a positive demeanor. Ability to work in a fast-paced environment, show flexibility, and be available when extensive work hours are required.
QUALIFICATIONS/PRE-REQUISITES:
Need to have experience in banquet/restaurant for at least 2 years. Have a clear understanding of fresh food production. Shows a willingness to grow and learn. Formal culinary training degree preferred.

JOB REQUIREMENTS:

JOB FUNCTIONS:
- Prepare food of consistent quality following Chefs recipe.
- Date all food containers and rotate per Standard Operating Procedures (SOP).
- Practice safety standards at all times.
- Cook orders as requested, including special requests.
- Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.
- Practice sanitation standards at all times. Make sure that all perishables are being kept at the proper temperatures.
- Control food waste, loss, and usage per SOP.
- Check pars for shift use and determine necessary preparation. Note any out-of-stock items or possible shortages.
- Assist in prep work of vall items as required for the next shift.
- Each associate is expected to carry out, within their capabilities, all reasonable requests by management.
- Be able to read and prep food items from daily prep lists.
- Minimum supervision needed when doing daily performances.
- Must be able to begin advance work for next day/shift.
- Must have basic knowledge of soups and sauce production.
- Must be able to communicate with management and coworkers.
- Proven experience as cook
- Must be Servsafe Certified
- Must be bilingual (english/spanish)
- Experience in using cutting tools, cookware and bakeware
- Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)
- Ability to follow all sanitation procedures
- Ability to work in a team
- Very good communication skills
- Excellent physical condition and stamina
- High school diploma or equivalent; Diploma from a culinary school will be an advantage.
