Mari.Ne is a hit new off shoot of the Michelin starred Korean Handroll Restaurant Mari. "Ne" (내) refers to a Korean word for someone's home or place; Mari.Ne would refer to a cuisine very similar in nature to our original Mari but simplified and expressed in a home-style like manner. Located in the busy neighborhood of Bryant Park, the team behind Kochi and Mari have created an ambitious project to expand throughout the city for our cuisine to be more accessible and approachable for everyone. Same creative and delicious cuisine presented in a more home-style like manner.
We are seeking a dynamic and creative Chef de Cuisine to join our culinary team. The successful candidate will ensure all kitchen operations are running smoothly and efficiently while maintaining the highest quality standards in food production and presentation. This role will work closely with the Executive Chef to develop new menu items and oversee all aspects of the kitchen.
- Plan, organize, and direct all culinary activities in the kitchen
- Train, mentor, and manage kitchen staff
- Develop and implement new menu items based on seasonal and regional ingredients
- Create recipes, determine portion sizes, and estimate food requirements
- Ensure all dishes are prepared according to recipes, quality standards, and presentation standards
- Monitor food inventory and order supplies as needed
- Ensure all kitchen staff adhere to health and safety regulations
- Monitor and maintain the cleanliness of the kitchen
- Reports directly to the Executive Chef (owner Chef Sungchul Shim) and the Culinary Director
- 5+ years of culinary experience preferred
- Proven experience as a management role or of the culinary team
- Thorough knowledge of cooking techniques and equipment
- Excellent knowledge of food safety and sanitation regulations
- A creative approach to food presentation
- Excellent organizational and leadership skills
- Able to remain calm and composed in a fast-paced environment
- A culinary degree or certificate is preferred
