Oversee the daily operations of the kitchen, including food preparation, cooking, and plating, at modern French restaurant serving French cuisine with a Mediterranean touch, including dishes such as octopus a feira, gazpacho Andaluz, moules mariniere, steak tartare, steak frites, escargots de Bourgogne, frisee aux lardon, beef bourguignon, coq au vin, sole meuniere, salade niçoise, ratatouille. Develop and design menus with new or existing culinary creations that align with the restaurant's concept, ensuring the variety and quality of the servings and considering customer preferences, dietary restrictions, and seasonal ingredients. Supervise and train kitchen staff, ensuring they adhere to standard operating procedures and maintain a high level of culinary excellence. Maintain food quality, consistency, and presentation throughout all dishes prepared in the kitchen, and approve and “polish” dishes before they reach the customer. Monitor inventory levels, order supplies and ingredients, and ensure proper storage to minimize waste and control costs. Arrange for equipment repairs when necessary. Collaborate with the restaurant management team to plan and execute special events, promotions, and menu changes. Ensure compliance with food safety and sanitation standards, including proper handling, storage, and disposal of food products. Stay updated on industry trends, new cooking techniques, and culinary innovations, and incorporate them into the menu when appropriate. Manage kitchen budgets, including food and labor costs, and implement strategies to maximize efficiency and profitability. Foster a positive work environment, promote teamwork, and motivate staff to maintain high levels of performance and job satisfaction.Requirements:Must have at least two years of experience as a CHEF DE CUISINE, head chef, or similar leadership position, which must include some experience preparing French food, and some experience preparing some form of Mediterranean food (either southern French, or the food of some other country bordering the Mediterranean Sea).
