Position Summary: Assist Café Manager and Executive Chef with the daily operation of the kitchen including food production, menu development, purchasing, inventory, sales, and cost controls. Oversee the back of house staff and monitor overall production and presentation of products. Ensure food sanitation and quality standards are met. Assist with back of house scheduling, training and leadership while reflecting the established standards for quality, productivity, professionalism, and customer service. Follow and lead by the organization’s Guiding Principles. Work independently as well as with effective direction from Café Manager to support staff members, volunteers, and vendors.
Essential Functions
- Coordinate, organize, implement, and supervise food production.
- Prioritize, oversee, and execute daily production for café operations in accordance with Standard Operating Procedures.
- Monitor freshness of products and ensure quality standards remain best in class for food production, distribution, and presentation.
- Lead creation, development, and implementation of Café menus and standardized recipes.
- Supervise and direct the work of others to ensure consistency and customer satisfaction.
- Coordinate, document, and supervise inventory items with Café Manager.
- Create, implement, and use standardized portion guides and recipe yields to place product orders for Café production.
- Monitor food cost and assist with inventory and costing of menus.
- Ensure proper storage procedures and organization of incoming product.
- Always maintain organized inventory items.
- Assist with delegating back of house staff responsibilities and monitoring performance.
- Assist with scheduling and take lead training and back of house staff development.
- Monitor performance standards for consistency of services.
- Act as a liaison and share and distribute relevant information with Café staff and Culinary Arts & Events Department.
- Monitor and maintain cleanliness and general organization of kitchen and back of house equipment.
- Maintain clean & organized food storage areas (coolers, freezer, dry storage).
- Ensure the daily set-up, clean-up, and sanitation of food service areas.
- Monitor maintenance of equipment and the café facilities using checklists.
- Report any service needs to Facility Maintenance and notify Café Manager.
- Maintain Health Department standards and sanitation certifications.
- Assist with coordinating and documenting food and beverage accounting information in correlation with Café Manager
- Track and log waste for Café food and beverage items.
- Document and track Interdepartmental Transfers between café, catering and concessions.
- Maintain quality communications and organizational skills; meet deadlines.
Other Functions:
- Assist with front of the house floor support for the café i.e. food production, clearing dining room and washing dishes.
- Assist with coordination and preparation of concessions food for summer concerts.

Proficient in computer skills including Microsoft Office, Excel, Word, Outlook, POS systems, and ordering platforms.
Personable, motivated, productive with leadership abilities
Skilled in establishing priorities and managing workloads but able to follow directions.
Must have a valid driver’s license and able to work a mixed schedule including days, nights, weekends, and occasional holidays.

Working Conditions: Basic mobility is expected in offices, grounds, and exhibition areas. Ability to observe details at close range and communicate information accurately with others. Engage in occasional object manipulation with or without assistance, and efficiently navigate the workspace to access essential resources. Ability to regularly move up to 20 pounds, frequently up to 50 pounds, and occasionally move 100+ pounds (i.e., load, unload, and move supplies, medium to heavy weight tools, and equipment). Occasionally ascends/descends a ladder. This job operates in a professional indoor office environment, across grounds, and exhibition areas. Occasionally, may be required to work outdoors under inclement weather conditions.
