SUMMARY OF POSITION
The Senior Pastry Cook (SPC)  reports directly to the Pastry Chef and General Manager.  The SPC works in collaboration with the all staff to maintain a spirit of teamwork, respect and pride in all operations.The SPC is a hands-on production position requiring someone who has experience in the daily operations of the commercial pastry kitchen.  The SPC is familiar with all standard operating procedures. 

The SPC will work closely with the Pastry Chef to scale, bake and produce all items in the pastry kitchen.  The SPC will work with existing  SOPs and protocols for quality assurance and cleaning and alert the Pastry Chef of any inconsistencies. 

COMPENSATION, BENEFITS & PERKS

• Employment Classification:  Permanent, Full-time, hourly
• Frequency of pay: Weekly
• Salary: $25-$27 per hour plus share of Employee Bonus Fund.  
• Company Benefits: 40 hours of paid vacation hours awarded after 12 months of continuous full time employment

RESPONSIBILITIES

• Accurately scale and produce all pastry recipes
• Ensures quality of all products through proper ordering, receiving, product rotation, and waste management
• Maintains and oversees the setup and efficiency of all kitchen equipment
• Maintains highest food quality and ensure consistency and safe handling at varying temperatures
• Follow TACP’s standardized recipes and perform regular quality controls
• Morning bake off as needed
• In conjunction with Pastry Chef, develop and test new recipes for retail store
• Place online orders
• Input & print par sheets
• Manage and execute house-made cracker program

QUALIFICATIONS

• 3+ years of pastry experience
• Proficiency with a sheeter 
• Experienced at shaping bread & pastry
• Proficiency in recipe costing and metrics
• Excellent culinary production skills
• Excellent communication, interpersonal, and leadership skills
• Proficient general computer skills (e.g. Excel/Google spreadsheets, emailing)
• Have great organizational and time management skills
• Have the ability to perform work at a high quality level with careful attention to detail, creativity, speed, and accuracy
• Be high energy, enthusiastic and display affinity for Talbott & Arding products, core values and company philosophy
• Ability to work well under pressure, be a clear thinker, to remain calm and to resolve problems using good judgment
• Solid written and verbal communication skills
• Will to learn scheduling and inventory management
• Ensure teamwork and proper communication with the front of house staff
• Availability to work onsite with a flexible schedule including evenings, weekends and holidays
• Ability to lift up to 50 pounds
• Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
• Ability to use commercial kitchen equipment including stand mixers, ovens, slicers, etc.
