OVERVIEW
The Senior Manager of F&B Operations is responsible for overseeing all facets of the Food and Beverage department, ensuring performance and sales goals are met; all team members are properly trained and have the necessary knowledge and tools for their success; company policy and directives are communicated and being followed; and all employees have a safe and healthy workplace.
ESSENTIAL ROLES & RESPONSIBILITIES:
- Reports to the Senior Director of F&B Operations and Table Service
- Supervises F&B managers
- Lead, perform, and prioritize however necessary to support the F&B department and overall business objectives and goals
- Responsible for hiring, training, and administering coaching and counseling, as necessary
- Oversee all facets of Food and Beverage, including: scheduling, operations, safety compliance, inventory management, sales, reporting, performance management, bar and food court R&M, Mirage build/breakdown, and ad hoc projects related to F&B
- Develop strategies and methods to meet departmental objectives, performance, quality control, and sales goals
- Understand performance metrics, data, order, and inventory trends; educate teams on key levers to improve margins
- Responsible for P&L reporting, cost controls, and profit management
- Ensure bars and food court are operating efficiently, working with ROS floor managers on best practices for employee performance, customer service, and salesmanship
- Organize workflow and ensure all F&B staff are properly trained and able to demonstrate efficiency with their duties and responsibilities
- Demonstrate excellent customer service
- Provide leadership to F&B team, working closely with managers and supervisors on approaches for developing individuals to their full potential
- Reward and recognize team members for good performance; coach and counsel productively
- Lead pre-shift meetings, ensuring all information is disseminated appropriately
- Ensure all DOH, SLA, OSHA, and any other applicable standards are being met
- Comply with company policy and applicable laws and regulations, communicating new directives, policies, and procedures to F&B team
- Document, evolve, and maintain departmental SOPs
- Ensure standards of conduct are being followed; staff morale, diversity and inclusivity practices, and positive work environment are always held to the highest standards
QUALIFICATIONS:
- 5-7 years in mid to senior level F&B management, overseeing both Food and Beverage operations, in venues, stadiums, arenas, hospitality industry, or equivalent
- Experience working in high-volume, fast-paced environments, a must
- Strong communication and management skills with top notch discretion, relationship management, and interpersonal skills
- Comfortable communicating up and down the organization with different stakeholders
- Positive, upbeat leadership style; able to problem solve under pressure while maintaining high degree of professionalism
- Must be able to work long shifts, including overnight
- Must be able to lift 40lbs
