Harris Ranch Beef Company - a family-owned, functionally integrated leader in premium, high-quality beef - is searching for a passionate, highly motivated candidate to join their production team in the capacity of Processed Meats Production Supervisor. The Processed Meats Supervisor will be instrumental to the commissioning of a state-of-the-art RTE facility. The individual will supervise the production of an extensive portfolio of high-quality, branded processed meat and poultry products. The successful candidate will demonstrate comprehension of and experience with:
- Products injected/smoked/cured whole muscle beef, pork, and poultry roasts for deli and slicing; seasoned cook-in-the-bag products and emulsified proteins
- Injection brine preparation, yield & uptake calculation, etc.
- Massaging/Marinating/Seasoning familiar with equipment and processes unique to each product
- Stuffing/Packing demonstrate comprehension of stuffing effects on slicing yields
- Cooking/Smoking manage an efficient 24/7 cooking schedule with experience of wet/dry bulb cooking and natural smoke processes with an understanding of equipment and Thermal Processing Authority
- Chilling exhibit knowledge of the impact of chilling on quality and slicing yields
- Packing experience with the intricacies of RTE processes
The Supervisor will interface with QA, R&D, maintenance, and sanitation to effectively supervise a department that consistently achieves expected product performance and production standards. The Supervisor will contribute to maintaining respective HACCP/SSOP/BRC programs.
Technical Skills and Qualifications:
- Minimum of at least two-three (2-3) years experience in a supervision role. Processed meat experience is recommended but not required.
- You will be required to work in refrigerated areas.
- Maintains up-to-date knowledge of process improvements and technical developments.
- Excellent time management skills and the ability to solve problems.
- Excellent verbal and written communication skills.

- Ability to monitor yields and production steps.
- Submit accurate data on forms and evaluations as required or requested.
- Ability to instruct new hires on safety policies and job-specific skills.
- Ability to comprehend and enforce RTE area policies and procedures.
- Ensure the proper and timely completion of all production activities.
- Ensuring the safety of all workers as per Occupational Safety and Health Administration standards.
