Craft is an upscale European style dining vessel seating up to 150 guests with indoor, outdoor with bar seating options. This beautiful 130-foot vessel will be conveniently docked near Sparkman Wharf and will offer premium dining experiences while cruising along the Hillsborough River and passing beneath the low bridges.
With an elevated food menu and craft cocktails this is a unique experience unlike any other in Florida. We are the first dining vessel in the United States with an open kitchen concept and the ONLY dining vessel in the United States cooking with gas equipment.

The River Journey
Prep Cooks butcher meat products, prepare meal ingredients, simple dishes, condiments and other items as directed by senior culinary staff.
Duties and Responsibilities
- Prepare meal ingredients as directed by the head chef, senior chef or other staff.
- Prepare fresh produce by peeling, cutting and portioning.
- Prepare meat by trimming, cutting and portioning.
- Prepare simple dishes such as breads or salads.
- Mix or prepare condiments, dressings and sauces.
- Maintain compliance with applicable health, safety, food handling, hygiene codes and standards.
- Assist with unloading, inspection and storage of raw ingredients and supplies.
- Perform other related duties as assigned.
Required Skills and Abilities
- Understanding of sanitation and regulations for workplace safety.
- Understanding of food handling techniques, preparation and cooking procedures.
- Ability to function well in a high-paced and at times stressful environment.
- Ability to work quickly and efficiently.
- Ability to work well as part of a team.
- Ability to maintain personal hygiene.
- Must ensure cleanliness standards are met in all storage areas, a clean and organized environment must be upheld.
Education and Experience
- Previous experience as a prep cook required.
- High school or vocational school coursework in kitchen basics such as food safety, preferred.
Physical Requirements
- Prolonged periods of standing and working in a kitchen.
- Must be able to lift, balance and carry products weighing up to 25 pounds.
- Must be able to work aboard a boat that is away from dock for several hours at a time.
- Exposure to extreme heat, steam and cold present in a kitchen environment.
- Manual dexterity to cut and chop foods and perform other related tasks.
