Pastry Sous Chef

Nestled in the majestic Rockies, at the center of historic Cripple Creek, the new Chamonix Casino Hotel offers Colorado’s best casino resort experience. With 300 high-end guest rooms and suites, and a spectacular new casino, Chamonix is less than an hour from Colorado Springs and only two hours from downtown Denver.

Join us in opening the new Chamonix Hotel and Casino in beautiful Cripple Creek Colorado. We are very excited and have a lot of ambition to create one of the best Pastry and Baking departments in Colorado. You’ll be working under the direction of the Executive Pastry Chef while working to support all pastry production for all outlets including restaurants, coffee shops, banquets, room service and events. The Pasty Sous Chef supports culinary management staff and hourly staff in daily overall kitchen operations for the Bakery/Pastry kitchen. Adhering to the Health Department regulations and FHR standards and expectations of food service and quality, freshness and presentation. Responsibilities include training of staff as well as prep, set up and prepare quality products in all areas of the Pastry/Bake Shop to include, but not limited to breakfast pastries, breads, dough’s, ice creams, sorbets, creams, syrups, jams, display/centerpieces, cakes, amenities, truffles, garnishes, cookies, petites fours, cookies, dessert specials and praline, in accordance with departmental quality standards and specifications.

Essential Job Functions

  • Maintains and ensures that recipes, flavor profiles, consistency in quality, appearance and production time frames are adhered to for all menu/food items being produced and that all food items needed for production are available to staff.
  • The individual in this role is responsible for food preparation, storing, and service delivery to customers in their establishment.
  • Assist with food inventory tracking such as quantity of supplies ordered and estimated time of shipment arrivals. Together with the senior kitchen staff, Junior Chefs are in charge of such logistics.
  • Responsible for cleanliness, organization and preparedness of immediate work space and adjacent areas.
  • Brief and communicate with the on-coming and out-going shifts and relay information to co-workers.
  • Assist with special projects as directed by Executive Pastry Chef
  • Communicate and work seamlessly with bread baking team
  • Maintains acceptable attendance record and arrives in the designated kitchen at scheduled time, in proper uniform and ready to work.
  • Perform other duties as assigned to support the efficient operation of the culinary division.
  • Must be able to work weekends and holidays.
  • Understand all aspects of the pastry/bakery menus developed by Executive Pastry Chef and how to execute each component
  • Understand the quality of product expected by Chamonix and how to edit product that is not to that standard
  • Works cleanly, ensuring that station is clean after every project executed
  • Execute recipe processes and techniques developed by Pastry management to ensure consistency and quality
  • Properly train, educate, and direct new bakery team members as needed.
  • Maximize efficiency in all areas of production and execute proper time management during shifts
  • Work in a thoughtful manner when executing any and all tasks
  • Act with integrity, honesty and knowledge to promote the culture, values, and mission of Chamonix
  • Contribute to create a culture and work environment based on respect; providing opportunities for staff to learn, grow, and develop their abilities
  • Other duties as assigned
  • Must display the ethical and professional standards at all times.

Qualifications

  • 3 years pastry experience minimum
  • Pastry management experience- preferred
  • Must be able to stand for up to 8 hours
  • Must be able to lift up to 50 lbs.
  • Must be able to communicate effectively in English.
  • Ability to read and effectively present detailed information both verbally and in written form to managers and employees.
  • Possess excellent basic math skills and have the ability to operate computer software programs including spreadsheet applications.

Compensation and Benefits:

$55,000 + based on experience
