POSITION SUMMARY
Responsible for the budgeting, cost controls and purchasing for the meat department. Maintain proper inventory controls, scheduling of staff and employee development. Cut, trim, or prepare consumer-sized portions of meat for use or sale in
retail grocery establishments.

Essential Functions Statement(s)
aProvide customer service by greeting and assisting customers, and responding to customer inquiries and complaints.
aPlan and budget purchasing.
aRecord quantity of meat received and issued to cooks or keep records of meat sales.
aTrack sales and purchases to ensure accurate buying.
aSchedule employees in accordance to the business needs.
aEstimate requirements and order or requisition meat supplies to maintain inventories.
aTrack inventory on hand to ensure proper turnover.
aSupervise other butchers or meat cutters.
aDirect other employees in the department to acheive the goals determined through upper management.
aReceive, inspect, and store meat upon delivery, to ensure meat quality.
aWrap, weigh, label and price cuts of meat.
aPrepare and place meat cuts and products in display counter, so they will appear attractive and catch the shopper's eye.
aPrepare special cuts of meat ordered by customers.
aCut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form.
aShape, lace, and tie roasts, using boning knife, skewer, and twine.
