Job Description
We are looking for a student to work in our Ennis, TX plant this summer, for an internship opportunity in the Quality Assurance Department. This is a summer internship with approximate dates of employment from May 13, 2023, to August 16, 2024.

Project Identification: Micro Project: EM Mapping Project/QA Project: Systems Project
Short Term Goals: Consolidate existing data sets
Long Term Goals: Build easy templates for continued data collection/reporting
Roles and Responsibilities
This position will support the Quality Assurance Team, which includes Supplier Quality, Plant Quality, and Microbiology, and will interact with every aspect of our production process. The QA Intern will be assigned duties that provide meaningful, practical hands-on experience across the areas of Quality Assurance, operations and plant sanitation. The QA Intern will have the opportunity to gain practical knowledge and skills of a Food Manufacturing Laboratory. Experience will be obtained through learning and participating in testing, analysis and working with team members within a fast paced and rapidly growing Food Production environment.
Specific tasks and project assignments will cover a wide range of Quality Assurance responsibilities.
Some examples could include:
• Moisture, fat, protein testing.
• Accumulation and statistical analysis of raw quality data.
• Conducting line checks for product quality.
• Ingredient microbiological and organoleptic testing and analysis.
• pH, oxygen, temperature testing.
Required Competencies & Knowledge:
Candidate must be completing either their sophomore or junior year at an accredited university while
working towards a bachelor’s degree. Degree programs in Food Science or Meat Science are preferred.
Candidate must be in good standing at their college or University as a full-time undergraduate or graduate
student.
Laboratory procedures and equipment.
Food Manufacturing, SQF, HACCP, and GMPs.
Proficient in the use of Microsoft Office Suite - especially Excel.
Willingness to roll up sleeves and perform a variety of tasks necessary to support the organization.
Proven leadership skills.
Strong analytical thinking skills and quick acclimation to systems.
Ability to:
Work 40 hours per week during the summer months.
