Great Horse is an extremely high end family owned private full-service country club located in Hampden, Massachusetts near Springfield, Massachusetts and Hartford, Connecticut. This premier property opened in June of 2015 after an expansive rebuild of the golf course and construction of a 30,000 sq. ft. clubhouse that sits high on a ridge facing west toward the Berkshires. The Club is open year-round and offers a robust calendar of social and athletic programming. The par 72, 18-hole championship golf course designed by notable golf course architect, Brian Silva, hosts approximately 10,0000 rounds annually and features more than 200 bunkers and five sets of tees (4,953 yards to 7,522); the rating/slope is 77.8/140 from 7,5220yard tees. Golf amenities for club fitting and instruction include an indoor golf facility with two hitting bays equipped with TrackMan and Sam Putt Lab equipment, a three-season driving range with covered hitting bay and 13 short game bunkers, and a 10,000 sq. ft. putting green and short game practice area with three playable target greens and numerous bunkers. Additional club amenities include a tennis hut, tennis courts, platform tennis courts, an ice rink, a basketball court, an outdoor pool with cabanas, a fitness center, five guest rooms, private event space, spa services, concierge services, men's and women's locker rooms, and a veranda offering scenic views of the golf course and Berkshire mountains. Dining outlets include a main dining room, outdoor veranda and a bar lounge area. Separate from the clubhouse is the Starting Gate, a public events facility.

Position Summary:

The Line Cook is responsible for managing the daily preparation of food items for a station or a specific area in the kitchen as well as responsible for cooking and placing all food orders in an efficient and attractive manner according to the Executive Chef and/or Sous Chef.

Your Role:

• Present food using proper plate presentation techniques.
• Coordinate completion of menu items
• Prepare work checklist and organize workstations for each shift.
• Abide by prep lists set forth by chefs.
• Check and maintain coolers and storage areas for cleanliness, quantity, and quality of food.
• Requisition of food with necessary approvals according to policy
• Take care of ranges, ovens, broilers, fryers, griddles, utensils, and other equipment
• Work well in a collaborative environment and under demanding conditions
• Ensure station prep is rotated and prepared properly to reduce waste.
• Be efficient in preparing stocks, soups, sauces, sandwiches, salads and sauteed items.
• Prepare butcher and cook meat, poultry, fish, and seafood.
• Wash, peel, cut and seed fruits and vegetables to prepare them for consumption.
• Understand banquet/function prep and execution.
• Other job duties as assigned.

Your Skills:

• Previous work experience as a line cook in a restaurant/club is a plus.
• Physical ability and stamina to carry heavy trays and stand for long hours.
• Availability to work various shifts, including weekends.
• Multi-tasking abilities
• Good oral communication skills
• Ability to remain calm and professional in a fast-paced work environment.
• Must be able to stand and walk for extended periods.
• Have a good attitude and participate as a member of the team.
• Able to work a flexible schedule, including nights, weekends, and holidays.
