The beautiful, soon-to-open Printing House Nashville, part of the Tapestry Collection by Hilton, is building it's team!! This downtown Nashville hotel will boast a busy, energetic environment, and we are looking for an experienced Food & Beverage Director to lead the F & B Team. REPORTS TO: General Manager
BASIC PURPOSE: Position is responsible for the short and long-term planning and day-to-day operations of all food-service operations of the hotel, including all restaurant and bar outlets, banquets and catering functions.
FUNCTIONS/RESPONSIBILITES:
- Assist with recruiting and hiring of food service employees, as well as training, follow-up and continual monitoring of departmental functions
- Conduct performance and salary reviews, resolve problems, provide open communication, discipline and as appropriate.
- Develop, recommend, implement and manage the division's budget capital expenditure plan, forecasts and objectives consistent with maintaining a first-class property and management's expectations.
- Oversee all functions of all F & B departments within the hotel, including restaurants and bars, catering and banquet operations
- Work closely with the Sales Team to maximize revenue and coordinate all functions where F & B services are required
- Oversee accurate and cost-saving purchasing procedures for all F & B outlets
- Monitor and ensure appropriate stock and inventory of food, liquor and supplies to ensure all functions and guest service are appropriately serviced
- Work with the culinary team to review, design and implement menu ideas and promotional opportunities
- When needed, assist other departments and employees with any tasks requested by a supervisor or manager
Knowledge and Skills:
Education
Post high school education preferred, including specialized training in the culinary field and Food & Beverage Management practices.
Experience:
Experience required by position is from four to five years of employment in a related position with this company or other organization(s)
Skills and Abilities:
- Requires advanced knowledge of Building Management/Engineering.
- May require considerable working knowledge of other major areas in the hotel and the skill to
- integrate and communicate that information.
- Requires analyzing activities and/or information involving some original data manipulation or interpretation to arrive at logical conclusions.
- Requires management skills.
- Ability to provide information and associated services to hotel management and guests.
- F & B management experience with thorough knowledge of the restaurant/hotel practices and procedures
- Ability to work flexible schedule. Long hours are sometimes required, including evenings, weekends and holidays
- Ability to understand and adhere to departmental budgets and financial expectations
- Strong written and verbal communication skills
- Must maintain composure and objectivity under pressure
- Must be effective in handling problems in the workplace, including anticipating, preventing, identifying and solving problems as necessary
- Must be effective at listening to, understanding and clarifying concerns and issues raised by team members and guests.
- Must be able to work with and understand financial information and data, and basic arithmetic functions
- Have knowledge and understanding of all department policies and procedures, and communicate and enforce all policies fairly and consistently with staff.

Hours Required:
- 50+ hours per week are expected to appropriately and effectively run the Food & Beverage Department.
- Flexibility in scheduling including weekends, night and holidays is required

Work Environment
- This position is a predominantly indoor position which requires the individual to work in a fast-paced and often unpredictable environment, both in back and front of the house.
- This will include working around a number of heat and/or cold producing appliances and devices, a diverse workforce, a work area prone to congestion, wet floors, etc.
- This position will also include interacting with guests, managers, and corporate personnel
Hearing/Speech/Vision
- Position requires the employee to be able to clearly communicate with, understand, and respond to direction
- Must be able to train, mentor, administer discipline to and communicate policies and procedures to the engineering staff
- Must be able to clearly communicate with guests and coworkers in a professional and articulate manner
- Must have excellent written and verbal skills, including the ability to compose business emails
- Must be able to visually monitor, read and respond to reports, written requests, and written policies and procedures
Chemicals/Agents: Position requires exposure to or use of:
Water treatments, industrial strength cleaning and degreasing agents, and other kitchen-related agents may be present
Protective Clothing Type:

- Hairnets and beard coverings when required/appropriate
Equipment Operation
Position requires the frequent use of a variety of kitchen appliances/devices, both manual and electric
Other Considerations
Personal appearance and grooming is key in this position due to the high guest contact nature of this position.
