Position: Director of Food & Beverage
Report To: Assistant Club Manager
Summary
This position will be responsible for the establishment and implementation of operational standards, initiatives, processes, and procedures to support Capital City Club at Brookhaven’s Food and Beverage operation to include all dining venues, banquet facilities and Beverage services.
Responsibilities
Team Development

  • Consistently model behavior that is in alignment with Capital City Club's values and leadership, earning respect of the F&B Staff and Club Department heads.
  • Provide recognition to inspire continuous improvement within the F&B areas.
  • Prepares job descriptions for outlet managers and assistants and supports the creation of job descriptions for all levels within the department.
  • Administers the Performance & Development Review system and performance management within the department to deliver well-trained team members at all levels and permit advancement for those qualified and interested in furthering their careers.
  • Drives training and identifies and recommends candidates with potential for future development, to attend further management training courses.
  • Build, develop, manage, and motivate an operational leadership team.
  • Provide leadership and support for all the Food and Beverage teams, especially mentorship of managers and potential managers.
  • Encourages through personal example the image and professional integrity expected of all Food and Beverage staff in contact with members, member’s guests, and vendors.
  • Maintaining and monitoring staffing, levels, Knowledge-Skill-Attitude (KSA), expectations and motivation to fulfill organizational requirements.
Quality Control/ Member Service
  • Promotes an organizational culture of mutual trust and respect that values individuals and encourages cooperation with others and a commitment to responsive member service.
  • Work with the Club’s team to ensure specific focus and resources are allocated to areas that are below plan or significantly below optimum potential.
  • Provide leadership and direction in the execution and measurement of guest service standards within the reporting areas in the Food and Beverage Department to ensure continued growth and member satisfaction.
  • Organize resources such as facilities and employees to ensure effective production of goods and services.
Food and Beverage Operation
  • Be responsible to achieve all Food and Beverage financial goals.
  • Be accountable for execution of Capital City Club’s F&B Standards of Excellence.
  • Adhere to all the various written mandatory standards of operations, accounting audit processes, policies and procedures, manuals, memos, verbal instructions, certification processes, training, etc., all of which go to define the essential functions of the job.
  • Provide leadership in the development and monitoring of Food and Beverage operations, fiscal budgets, and marketing strategies to produce both short-term and long-term member participation.
  • Develop new and analyze existing special promotions that will improve member patronage under the guidelines of the Club’s policies.
  • Ensure all policies, procedures and practices are consistent with the company’s core service standards and values.
  • Diagnose operational deficiencies and structure execution plan to narrow gaps on the deficiencies.
  • Think strategically and develop practical solutions, taking into consideration short- and long-term requirements, peripheral concerns, and changing priorities and trends.
  • Review activities and conduct inspection tours in areas of responsibility. Ensure proper image is being maintained by all departments.
  • Monitor and analyze the payroll and budgets for departments to ensure maximum effectiveness towards guest service while demonstrating fiscal responsibilities.
  • Act as Manager-on-Duty as required and provide acting management support in absence of Club Managers.
Administration
  • Serve as a consultant and a resource when needed to supplement individual department game plans with F&B offerings that are relevant to Membership.
  • Accountable for all aspects of F&B programming including interdepartmental communication, formatting, training, and execution.
  • Act as a resource to the Assistant General Manager, Club Manager, and Assistant Club Manager in addition to the Club Department Heads. Be responsive to the needs of the Club team in the implementation of Food and Beverage programs that drive operating efficiencies.
  • Be a resource/consultant to the Food and Beverage operations of the club and the Department Heads that are implementing recommended Food and Beverage programming.
  • Participate with the Chefs and club department heads in the analyzing, evaluating, and writing of attractive and creative menus.
  • Coordinate the development, interpretation and implementation of club policies, operating procedures and training programs, manuals, directives, menus, work schedules, rules and regulations for the Food and Beverage staff and personnel.
Strategic /Long Range Planning
  • Work closely with the department teams to develop and design innovative Food and Beverage programs.
  • Supports Training and Behavioral Skills trainers and is focused on delivering club standards.
  • Develop and implement the strategic plan and vision for the Food and Beverage Departments consistent with the Club’s objectives.
  • Develop a strategic plan that includes short-term and long-term priorities for organizational growth.
  • Provides expert direction in developing/recommending strategy and defining strategic issues to ensure that operation requirements are met effectively and efficiently.
Qualifications
  • College degree in the culinary arts, hospitality, or business administration, preferred.
  • Food and Beverage experience in premier club or resort handling multi-unit Food and Beverage departments.
  • Sound interpersonal skills and high level of diplomacy and tact in dealing with a broad range of individuals and groups.
  • Ability to communicate effectively in English, both verbally and in writing and to diverse audiences.
  • Ability to develop strategies for the delivery of superior customer service.
  • Good working knowledge of PC software (MS Word, Excel, Outlook, etc.)
  • Ability to establish guidelines for proper staffing to maximize efficiency and minimize labor costs.
  • Good organizational skills to function effectively with attention to detail while meeting established deadlines.
  • Ability to work in a fast-paced, busy environment while meeting deadlines.
  • The position requires initiative, creativity, and self-motivation as well as discipline.
  • Strong POS knowledge as well as CRM software knowledge.
