Job description

Responsible for Managing the overall operations of TPC Prestancia Restaurant to include Club Events and Private Function Opportunities. Assure the wants and needs of Club members and guests are consistently exceeded. Provide for a cohesive environment of all House operations. Plan and implement budgets, hiring/training of personnel, and the supervision of subordinates.

ESSENTIAL DUTIES AND RESPONSIBILITIES

· Develops an operating budget for the department’s revenue sources; after approval, monitors and takes corrective action as necessary to help assure that budget goals are attained.

· Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized.

· Increase levels of food service quality and enhance overall ambiance of member dining experiences.

· Perform regular reviews on at least a quarterly basis of restaurant menu offerings and prices in coordination with Executive Chef.

· Coordinate daily opening and closing of the restaurant.

· Helps plan and approves internal marketing promotion activities for the Food and Beverage Department.

· Ensures integration and coordination of all social events.

· Occasionally may attend Long Range Planning, Membership, Finance or Board meetings as requested.

· Manages the long-range staffing needs of the department.

· Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.

· Establishes quantity and quality output standards for personnel in all positions within the Food and Beverage Department.

· Develops and implements policies and procedures for Food and Beverage Department.

· Oversees scheduling of periodic meetings of Food and Beverage Department employees to assure correct interpretation of club policies and delivery of service to members and guests.

· Plans and implements procedures for special club events and banquet functions. Responsible for ensuring successful execution of all dining oriented services related to special club events and banquet functions.

· Greets guests and oversees actual service on a routine, random basis.

· Helps develop wine lists and sales promotion programs for bottle/glass wines, specialty cocktails, and craft beers.

· Addresses member and guest complaints.

· Develops new and innovative ways in which to stimulate member activities and participation in Club events.

· Conducts on-going inspections throughout the kitchen and restaurant to assure that cleanliness, preventative maintenance, energy management, safety, and other standards are consistently attained. Maintains appearance, upkeep and cleanliness of all Food and Beverage equipment. Works with the GM and Administration to affect repairs and maintenance as needed.

· Approves all product invoices before submitting to the Administrative Office.

· Maintains records of special events, house counts, food covers and daily business volumes.

· Works with other department heads on special projects and events.

· Duties and Responsibilities related to Special Events:

o Promotes the club social event facilities to all members.

o Helps members and their guests arrange banquets, luncheons, meetings, weddings, dances and other social events; obtains pertinent information needed for guest planning.

o Suggests menu and helps guests plan menu in conjunction with the Executive Chef and/or other culinary personnel.

o Helps guests with entertainment, decorations, audio/visual and any other requirements integral to events being planned.

o Transmits necessary information to and conducts event planning with production and serving staffs; arranges for printing of menu and procuring of decorations and entertainment.

o Inspects finished arrangements and present to oversee the actual service and greeting of guests.

o Creates and checks special function sheets against room set-up, oversees personnel scheduling for special functions and helps supervise service personnel.

o Handles client complaints.

o Maintains past and potential client files to assess on-going needs of prospective clients for catering services.

SUPERVISORY RESPONSIBILITIES

· Food and Beverage employees report to the Food and Beverage Director.

· Interview, select, train, supervise, counsel and discipline all service employees in the department.

· Develops on-going professional development and training programs for service staff.

· Helps plan and approve the organizational chart, staffing and scheduling procedures, and job descriptions/specifications for all department staff.

· Ensures that all legal requirements are consistently adhered to including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages.

· Ensures that all services to members and guests are conducted in a highly professional manner.

· Ensures a safe working environment and attitude on the part of all employees in areas of responsibilities.

OTHER RESPONSIBILITIES

· Interact positively with the Board of Trustees, management, supervisor, co-workers, members, and the public to promote a team effort and maintain a positive and professional approach.

· Seek out new and innovative ways to meet, and respond to, the needs and demands of an ever changing and diverse membership.

· Come to work regularly and on time; be a leader; follow directions; accept criticism with composure; get along with co-workers and supervisors; and treat co-workers, supervisors, members, guests, and others with respect and courtesy.
