Floor Sommelier/Supervisor
The Head Sommelier position at Kettner Exchange is a full-time hybrid role of service, supervision, and admin. This position works closely with the management team and all other front-of-house and back-of-house team members.
The Head Sommelier is responsible for maintaining a wine list that meets the goals set by management and for ensuring that proper service of wine and beer is maintained. This staff member conducts training of wait staff and keeps them up to date of all changes to the wine list. The sommelier orders wine deliveries as needed, maintains the beverage storeroom, and verifies all wine delivery invoices.
Essential Duties:
Wine Program
Creates and maintains a wine list that meets the goals set by management
Maximize profit by maintaining profit margins
Meets goal for inventory levels in both dollars and number of bottles
Keeps list up to date with wine trends
Conducts a regular cost and sales breakdown
Staff Training
Trains staff to maximize revenue through increase sales/spending
Conducts weekly training to ensure the staff knows pronunciations, origin, and grape variety of each wine on the list Train staff on wine knowledge and wine and food pairing
Ensures staff is up to date on all additions and deletions from the list
Purchasing and Inventory
Maintain organized and clean beverage storeroom
Ensure that all wine beverage deliveries are checked in
Verify all wine beverage invoices
Ensure all wines are put away promptly
Process all invoices in a timely manner, following up on any billing disputes
Conduct a monthly inventory of all wine
Make changes to wines in POS system as necessary
Service
Work dinner service on a regular basis (rotating as supervision and server)
Interact with guests and serve customers as required and make recommendations
Assist wait staff with wine service when appropriate
Competencies & Qualifications:
Previous experience in a fine dining environment, preferably in a similar role (3 years)
Outstanding knowledge of wines
Actively practice food safety procedures
Organizational skills
Effective time management
Pleasant demeanor
Positive and clear written and oral communication skills
Ability to work well in a team environment
Ability to engage guests successfully and build a relationship
*$16.30 to $20+ Hourly (Based on Experience) + Tips
