IMPORTANT:
- WE ARE LOOKING FOR Executive Chef candidates with current and past independent, luxury hotel culinary experience, this is highly preferred over branded hotel, casino, and country club experience.
- We are looking for candidates with good experience that can drive results.
- Cleanliness of the workspace and the operation is really important, as is the ability to work with the front of the house staff, the ability to work with a tenured staff, a union staff.
- The ability to work with computers and systems, to build menu pricing and recipes. Able to cost things out and stay on top of that regularly.
Key Relationships:
External: Hotel guests/visitors and vendors/suppliers.
Internal: All hotel staff, managers, supervisors, and Executive Leadership
Essential Job Functions:
Responsible for the management of all aspects of the Culinary operations functions, in accordance with hotel standards. Directs, implements and maintains a service and management philosophy, which serves as a guide to respective staff.- Ability to operate in a full-service fine dining establishment.
- Familiar with all aspects of cooking, light butchering, light desserts, Banquets, and Ala Carte.
- Responsible for all F & B daily duties such as hiring, scheduling, effectively coaching, training new staff to resort standards, and resolving guest complaints.
- Responsible for overseeing kitchen staff, ensuring the quality of food items, developing the menu and maintaining food cost and pricing analysis.
- Ability to perform job functions with attention to detail, speed and accuracy.
- Must understand guest's service needs.
- Must have knowledge of F&B preparation techniques, health department rules and regulations, and liquor laws and regulations.
- Ascertain departmental training needs and provide such training to team members.
- Evaluate the direct performance of staff and follow up with corrections when needed.
- Input and access information in the property management point of sales system.
- Lead, motivate, and retain team members using strong leadership and interpersonal communication skills.
- Schedule and strategize departmental coverage while utilizing cross-training efforts on the team.
- Must be open to a variable schedule and length of shifts
- Prepare weekly payroll submissions and edit/approve all timecards.
Essential Requirements:
- Previous Executive Chef experience
- Banquet Chef and or Sous Chef experience at a 4-star hotel or Resort for a minimum of 4 years
- Successful track record leading a diverse staff
- Strength to hold staff accountable for day-to-day actions
- Union experience is a huge plus
Experience:
- Exert physical effort in lifting up to 50 pounds
- Push/Pull 50 + pounds
- Endure various physical movements throughout the work areas.
- Remain in stationary and mobile position for 8 hours throughout the work shift.
- Satisfactorily communicate with guests, management, and co-workers to their understanding.
Position Reports To: Hotel General Manager
Positions Reporting To the EC: All Culinary Team Members - Approximately 33 team members – executive sous, sous chefs, kitchen supervisors AM/PM, cooks, pastry chef, EDR cook, stewards, banquet cooks etc.
Salary: Generous, to be discussed
Bonus: Annual and Quarterly Bonus Potential up to 25% of annual salary, subject to change
Relocation: Yes - to be discussed with the hotel
