Opportunity in Savannah, GA area.
We are looking for a professional Executive Chef to be in command of our seasonal Beach Restaurant. This is a very busy location during Spring and until August. This position can be a seasonal position for 6 months or it can be full time as we stay open for the entire year. As Tybee grows in popularity so does the need for year-round dining.
We already have an amazing Chef d Cuisine, two sous and a great team in place. We are looking for is someone to join the team and assist in overseeing the business side of the restaurants and help ensure success of the location as we negate the busy season and the growth we are experiencing. This is a role that will require dedication and require you to do what you need to do to get through a successful busy season.
April until the end of July is very busy and you will work long hours however the season slows in August when school resumes in the South. This is not a position to apply for if you are looking to take it easy. You will work every weekend and through season and you will earn every dollar, but with the seasonality comes the slower season where it is much more relaxed and as you move into the cooler months it slows even more.
The successful candidate will employ their managerial and culinary skills and play a critical role in maintaining and enhancing our customers’ satisfaction and overall dining experience.
We are looking for an individual who is passionate about leading a culinary team. You will need to exercise your experience to inspire, motivate, and elevate the work experience and service standards whilst engendering a positive work culture. You must have an extensive culinary background and BOH management background in a high-volume, independently owned venue. You must have an in-depth understanding of financials as they relate to purchasing, labour, and COGS.
Responsibilities
- Responsible for the preparation and design of all food menus
- Actively control labor cost, food COGS, and operating expense spending
- Produce high quality plates both design and taste wise.
- Ensure that the kitchen operates in a timely way that meets our quality standards.
- Resourcefully solve any issues that arise and seize control of any problematic situation.
- Manage and train kitchen staff, establish working schedule and assess staff’s performance.
- Order supplies to stock inventory appropriately.
- Comply with and enforce sanitation regulations and safety standards.
- Maintain a positive and professional approach with co-workers and customers.
- Execute monthly inventory.
Skills
- Proven experience as an Executive Chef
- Expertise in various cooking methods, ingredients, equipment and procedures
- Excellent record of kitchen and staff management
- Accuracy and speed in handling emergency situations and providing solutions.
- Familiar with industry’s best practices
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
- BS degree in Culinary Science or related certificate would be a plus
