Located on South Michigan Avenue and overlooking Grant Park and Lake Michigan, this hotel offers 1,544 guest rooms and suites, 234,000 square feet of meeting and event space, and exceptional dining options.
The ideal candidate will be a dynamic leader who is dedicated to excellence, creative, a team player, extremely organized and thrives in a high-volume environment. This individual must be well-versed in cocktails, wine, and overall beverage curation. At least 5 years of Beverage management experience in a high-volume hotel is highly preferred. Prior union experience is huge plus!

The Director of Beverage directs and administers sales of Beverages in restaurants, lounges and banquet events. Ensures compliance with health, safety, sanitation and alcohol awareness standards. Helps ensure high standards of food and beverage quality, service and marketing to maximize profits and ensure outstanding customer service. Interviews, trains, supervises, counsels, schedules and evaluates staff. Specifically, the Director of Beverage will:
- Hire, train, supervise, direct, coach, counsel, and evaluate staff in all beverage operations in the Hotel. Communicate effectively, both verbally and in writing, to provide clear direction to the staff. Assign and instruct Beverage staff in details of work. Observe performance and encourage improvement where necessary.
- Communicate with guests and Team Members using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions and provide accurate information. Remain calm and alert, especially during emergency situation and/or heavy hotel activity, serving as a role model for Beverage staff and other hotel employees. Interact with sales department personnel and restaurant staff as needed for guest service purposes
- Maximize Beverage department and outlets profitability; implement effective controls of Beverage and labor costs and monitor the department's budget to ensure efficient operations, including achieving budgeted revenue and labor expenses. Ensure par stock levels are maintained by calculating inventory, ordering, retrieving and stocking product. Evaluate cost effectiveness of all aspects of operation. Develop and implement cost saving and profit enhancement measures. Maintain established inventory by ordering all liquor and supplies in accordance with business needs.
- Develop menus and beverage marketing strategies to be presented to Director of Food & Beverage for final approval.
