We're looking for an amazing Director, Fleet Restaurant Operations.  This position will be based in our Ft. Lauderdale office.  You'll be responsible to lead and direct all Fleet Restaurant Operations and the affiliated staff. The role will ensure the quality of food products and services to maintain the overall guest experience. Responsible for the strategic development of long-term and short-term fleetwide deployments that optimize Restaurant Operations profitability, guest satisfaction and are in line with the corporation' wider objectives for Food & Beverage.

Responsibilities

  • Ensure each ship's DRO, Restaurant managers, Lido Managers and Assistant Managers maintain acceptable staffing levels in all departments to build sales and improve profitability.
  • Ensure all Limited Time Offers, drink specials, menu and procedure changes are rolled out in a clear, precise, and effective manner.
  • Establish short and long-term departmental goals and objectives to execute while maintaining appropriate standards of performance for the team. Modifies plans based on business priorities.
  • Drive performance, guest service scores, NPS, OBR and OBE Scoters and sales levels improvements for all Ships Dining Locations and ensure that the strictest standards of USPH sanitation, food safety and cleanliness are practiced in every restaurant, by every team member on a daily basis.
  • Responsible for compliance of PCL ship and shoreside Restaurant Operations organization within guidelines set forth by regulatory agencies.
  • Establish budgets for all restaurants in alignment with region and company goals. Fiscal responsibility to remain within budget by continued monitoring of spend and identifying opportunities for cost optimization. 
  • Ensure each DRO is hiring and retaining team members to help improve productivity and quality of the guest experience while producing and maintaining an effective and measurable succession plan for all levels within their area, including management, team members and assistant managers.
  • Teach, coach, lead, mentor, and develop DRO's and the entire Fleet restaurant management team. Ensure market is showing continuous improvement in driving performance and utilizing performance management skills.
  • Ensure new company initiatives are supported and communicated clearly to all managers and team members.
  • Diagnose and troubleshoot business opportunities as well as participate Hiring of new DRO's and Promotions in Fleet


Requirements

  • Bachelor's degree in Hospitality/Restaurant Management, Business, or related field from a four (4) year college or university
  • Leadership and Engagement Skills
  • Minimum 10+ years progressive work experience in Food and Beverage operations, to include five (5) years Senior Management Capacity
  • Minimum 5 years working with financial documents including budgeting, food cost analysis and labor cost analyst
  • Experience and/or training in nutrition, food preparation, safe food handling techniques and food service management required.
  • Must have supervisory, coaching and staff development experience
  • 5 years demonstrated experience collaborating across a Food and Beverage organization. 
  • 8 years' experience managing a staff of 10+ in a support and project-oriented matrix organization.
  • Must have excellent interpersonal/relationship building skills
  • Ability to work flexible hours, including nights, weekends, and holidays in addition to normal business hours, as needed.
  • Travel expectation is 40-50%

  • Base Salary Range: $119,900.00 - $161,800.00. The range is applicable for the labor market where the role is intended to be hired. Final base salary is directly related to each candidates' qualifications and experience uniquely.
