Responsibilities
The CTSA Dietary Assistant is responsible for all functions within the CTSA Metabolic Research Kitchen. This includes planning the Metabolic Kitchen meal service, organizing menus and food labels, conducting inventories, ordering food and supplies for the kitchen, meal preparation, meal service and clean up. Precise research techniques are used for weighing, preparing and serving food to research volunteers. Attention to the details of menus and precise weighing of food is essential. Proper food handling, sanitation and safety policies must be followed. The assistant interacts directly with patients, giving instructions for proper adherence to research diets and monitors their compliance. In addition, the assistant interacts directly with skilled medical professionals and physicians. The assistant must be able to work independently as well as part of a team, be highly organized and demonstrate problem-solving abilities.
Qualifications
Requires a high school degree with one year experience in institutional or restaurant food service. Dietary assistants' will occasionally work alone and unsupervised, thus strong decision and problem-solving skills are necessary. Attention to detail and strong organizational skills are important as well as, good written and oral communication skills. Work experience that required working directly with customers or patients would be beneficial.
