Job responsibilities: The Assistant Food Service Supervisor directly supervises the cook supervisor and inmate Food Service workers assigned to the kitchen and is responsible for the preparation of facility meals in accordance with preplanned menus.
Essential functions:
Supervise and monitor the work of cooks and inmate Food Service workers, which includes long periods of walking and standing involving stairs and the ability to push and/or pull food carts.
Prepare and cook quantity of food required according to menu and number of inmates.
Maintain kitchen equipment in orderly workable condition. Ensure the work area is safe, clean, and sanitary at all times.
Exercise judgement and use discretion when responding to incidents and determine whether to intervene or call for security staff.
Prepare foods as directed for special facility functions and visitors.
Assist in cleaning kitchen work areas following each meal.
Supervise inmates assigned to assist in the kitchen.
Maintains appropriate boundaries with inmates.
Maintain the count and control of knives and other controlled kitchen tools. Provide a count of all control items at the beginning and end of each shift. Responsible for the security of the Food Service area.
Education and Experience Requirements:
High school diploma or equivalent required.
A valid food handlers permit is also required, if required by the state of Texas.
Food service training, two (2) years of Food Service or related experience and prior supervisory experience required.
Must possess a Jailer Certificate as determined by the Texas Commission on Law
Enforcement (TCOLE). Must pass both a physical and psychological assessment as determined by TCOLE.
Must be at least 18 years of age. Valid drivers license in the state of Texas with an acceptable driving record required, unless waived by management.
