Wild Crumb needs a Lead Croissant Baker! We are looking for someone with a positive attitude that works well both independently and with others and is passionate about baking or lamination!
The Lead Croissant will help to manage the day-to-day operations. They will be in charge of the Croissant Team when the Croissant Manager is off or unavailable.
Duties include:
- Requirements
- Must be a full-time employee
- Must be available over major holidays
- Must be able to cover overnight shifts or be regularly scheduled on overnight shifts
- Must be available to cover weekends or be regularly scheduled on weekend shifts
- Ensure quality and consistency of doughs, shaped croissants, finished croissants
- Help identify and resolve day-to-day events with butter, dough, ingredients, equipment, facility, process, employees
- Help set and monitor schedule for preferments, doughs, dough shapes and specials
- Coordinate and communicate with off-shift team members and other teams for menus, prep, cleaning, improvements
- Help execute menu items correctly, pull items, and check dates on prep
- Put away orders
- Help oversee special orders
- Contribute to holiday items, specials
- Answer customer questions
- Maintain a clean and well-organized kitchen
- Be well versed in all croissant shifts to help cover shifts and train.
- Help train and coach new hires and existing employees
- Guide employees when they are idle
- Answer co-worker questions
- Set a good example for fellow employees
- Help set employee schedule
- Respond to and address behaviors and incidents in the Croissant area when Croissant Manager is not present (lead corrects minor issues, communicates and asks for guidance from Croissant Manager on larger issues)
- Covers Croissant Manager’s days off and vacations
- Learn: additional croissant tips and techniques and share with other employees
- Basic Knowledge of baking and mixing dough. Gluten development, time/temperature as related to yeasted doughs.
