Job Description:
Responsibilities:
Machine Operator:
- Determines upcoming production needs by studying production sheet to anticipate changeovers and assigned products to machines. Uses this information to have correct film, co-dates, stickers, hot stamps, etc. ready for next order
- Maintains specifications by observing operations, detecting malfunctions, and inspecting product for pleats, leakers, holes, registration, and code-dates to keep within specified bag waste limits
- Ensures product specifications by completing weight checks on packing lines and ensures good manufacturing procedures by following housekeeping standards
- Limits downtime to specified standards by:
- Completing machine changeovers in specified time to ensure production standards
- Resolving production problems by altering process to meet specifications. Communicating with packing room supervisor, lead packers, and master machine operator to resolve issues or obtain maintenance troubleshooting
- Performs cleaning duties to include floor sweeping, refilling supplies, and cleaning slip-stik and entire work area. Completes sanitation duties on rotating schedule
Mixer:
- Ensures that production standards are met by:
- Transporting dough from mixer and hoisting above shoulders into hoppers
- Enters request into computer for a mix when dough table has depleted according to set standards
- Filling old dough tank
- Making malt and yeast as necessary by combining bags of malt and/or yeast with water blend, checking temperature, and recording numbers according to procedure
- Checking mixer, conveyor belts, and automated/manual delivery systems to detect and correct problems and malfunctions in areas such as the mixer, conveyor belts, dough bot, loaf cutter, and electronic eyes according to procedures. Listening for alarms and/or lasers to detect problems
- Perform routine procedures to ensure systems run properly such as cleaning of blades, cleaning of electronic eyes and replacement of waste hoppers
- Maintains specifications by observing operations and:
- Inspecting for out of specification product and taking action to remove misshapen pretzels, holes and ensure pretzel rods are forming straight.
- Performing weight checks, checking, and recording dough temperatures, checking, and adjusting cutter speeds, collecting test samples, and adjusting extruder speed
- Checking to ensure that mixes are weighing properly
- Resolving production problems by adjusting processes to meet specifications; and communicating with oven room supervisor to resolve issues or obtain maintenance for mechanical assistance
Oven Operator:
- Ensures that production standards are met by efficiently running oven lines
- Responsible for monitoring process through LD display gauges and checking against checklist and established procedures. Listen for alarms and lasers to detect problems
- Documents each reading on process control sheets and reports irregularities to supervisor
- Follow safety procedures and checklist for start-up, emergency stop, and restart of oven lines after power failures
- Maintains specifications by:
- Obtaining and delivering samples for testing to the lab every hour per set procedure
- Conducting appearance, break and taste test every hour and discuss evaluation with supervisor
- Initiating process changes based on lab feedback
- Ensures good manufacturing procedures by following housekeeping standards
- Cleans ovens to include wash down of cooker and transfer area at scheduled machine shutdowns by following standard procedures and safety procedures. Complete sanitation duties during machine shutdowns
- Ensures efficient and quality production and positive employee relations by complying with all employment policies, rules, regulations, safety procedures, good manufacturing procedures, product protection standards and actively participating in all training requirements
