Job Summary

Responsible for the preparation of all restaurant items and side items requiring sushi nigiri and rolls, and sashimi. Facilitates all sushi (including sushi rolls) and sashimi, cold dish preparation of the restaurant requiring various cooking methods, knife skills, and organizing/procuring of ingredients for the restaurant.

Essential Functions

• Follow all recipes as provided by management. Keep updated on recipe changes and ensure proper execution of recipe procedures to maintain a high quality and consistent product.
• Read tickets and prepare order.
• Coordinate ticket with service/kitchen staff and managers.
• Follow prep work as specified by the Manager or Supervisor.
• Daily specials
• Line checks
• Organization of back of house (storage, prep, line and dish areas)
• Schedules (coverage and costing).
• Food par levels
• Temp logs monitoring
• Kitchen opening and closing procedure.
• Physical Inventory (storage area, freezer, cooler, spice rack, bag-in-box area, expo area, line and service stations)
• Follow “Clean as you go” work habits.
• Follow safe work habits and notify supervisors of any dangerous or unsafe place in work area.
• Make frequent suggestions to your direct supervisor in order to bring the standard up and keep your interest on the job.
• Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
• Maintain complete knowledge of correct maintenance and use of equipment; use equipment only as intended.
• Always maintain positive co-worker and guest relations. Work cohesively with co-workers as part of a team.
• Maintain and strictly abide by State sanitation/Health regulations and company standards.
• Adherence to all company policies as stated in the employee handbook.
• Perform job functions with attention to detail, speed, and accuracy.
• Prioritize and organize.
• Be a clear thinker, remaining calm and resolving problems using good judgement.
• Work with minimal supervision.
• Must have good communications skills.
• Maintain confidentiality of company information and recipes.
• Product Rotation adheres (FIFO)
• Sanitation standards (temperature logs, HACCP review, sanitation walkthroughs)

Qualifications/ Requirements

• Minimum 1 years experience as a Sushi cook or at an Asian restaurant in a high-volume atmosphere
• Good knowledge of various sushi types and sushi-rolling techniques
• Food handling certificate
• Compute basic arithmetic.
• Provide legible communication.
• Comprehend and follow recipes.
• Team Player: Works well as a member of a group
• Be able to lift 20+ lb at a time
• Dedicated: Devoted to a task or purpose with loyalty or integrity
• Must be dressed and well-groomed in Company approved uniform, at all times.
• Must always wear approved manufacturer certified slip resistant or non-slip shoes while working.
• Availability to work during business hours, including weekends and evenings
