JOB SUMMARY:
Join the award-winning KU Dining team for an excellent work environment and fantastic benefits. As a supervisor, you will prepare complex menu items using recipes according to serving line demand. Our supervisors assist in training cooks, cook's helpers, and part-time team members. You will maintain departmental cash handling policies in operation of facilities.
SUPERVISION GIVEN & RECEIVED: Receives direct supervision from Assistant Director - Catering. Supervises Full-Time and Part Time employees.
ESSENTIAL FUNCTIONS:
- Food preparation - Meet guidelines for overproduction/waste, record production usage, provide recipe feedback to senior supervisory and management staff. Perform and coordinate the timing of overall production and completion of menu items to ensure timeliness meeting acceptable, correct quality standards.
- Quality indicators - Check quality indicators for food items taking corrective action as needed. Indicators include cleanliness, appearance, flavor, texture, and food temperatures. Inform your supervisory staff when questions/problems arise.
- Dependability - Open, close, and secure dining center. Assist in running unit operations and responding to dining staff questions. Make on-site decisions and necessary adjustments in production and scheduling, ensuring coverage is proper.
- Quantity - Maintains quality, quantity, and safety control standards. Performs daily working supervisory and cooking duties in cold and hot foods production areas to ensure operation needs are meet.
- Communication - We trust you to positively interact with customers and coworkers, following up on concerns. Supervise receiving, inventory taking, scheduling, hiring, disciplinary procedures, production, and quality of dining operation.
- Perform any other related duties as required or assigned. In this role you will directly supervise full and part-time employees.
REQUIRED KNOWLEDGE, ABILITIES, & SKILLS:
- Required knowledge, abilities, and skills
- Ability to use and teach proper equipment operation in a state-of-the-art kitchen.
- Knowledge of modern health, sanitary and safety standards and practices applied to food service.
- Ability to follow recipes and product cooking instructions.
- Ability to maintain quantity, quality, and inventory controls.
- Ability to perform above average physical requirements of food service work to include stooping, bending, extensive walking, standing for long periods and lifting 50 pounds.
MINIMUM QUALIFICATIONS:
- High School graduation or GED equivalent
- Demonstrated effective understanding of food preparation and food service operations.
- Able to demonstrate common culinary skills and understanding of culinary concepts.
PREFERRED QUALIFICATIONS:
- Minimum two years of volume food service production experience with some supervising responsibilities
- ServSafe certified
