Two-year culinary degree preferred. Minimum of four years food preparation in high volume establishment. Ability to coordinate multiple tasks. Ability to implement strategic vision and plans into day-to-day operations. Must demonstrate supervisory skills.

- Must be able to obtain a San Diego County Food Handler’s Card.
- Strong leadership skills are necessary.
- Must be able to work long hours, any day of the week and any shift including weekends and holidays.
About the role:
- Supervises the preparation of food in assigned kitchen.
- Performs frequent checks of assigned food preparation areas and assist in food production when volume requires.
- Assists in the maintenance of prescribed standards for quality, quantity and appearance of food prepared in assigned food preparation area through effective guidance, counseling, and instruction of assigned personnel.
- Assign stations and breaks for subordinate personnel and directs their work activity.
- Maintains an adequate supply of food stock for the needs of assigned kitchens; controls ordering to eliminate waste; and keeps sanitary conditions at acceptable standards.
- Encourages cooperation between assigned food preparation personnel and food service personnel to insure quick and efficient service from the kitchen.
- Maintains facilities and equipment in clean and operable condition.
- Performs inspections of assigned areas as directed.
- Prepares and presents periodic performance appraisals of assigned personnel and recommends promotions of wage increases to Specialty Chef.
- Counsels, coaches, guides, and develops assigned personnel in the performance of their duties.
- Provides for safety and security.
- Handles employees' complaints or grievances.
- Recommends disciplinary action or disciplines employees.
- Supervises and monitors workload of their direct reports.
- Monitors legal compliance with federal, state, and gaming laws.
A few more things:
- Must be able to maneuver to all areas of the kitchen and food service areas.
- Must be able to tolerate areas with high, humid temperatures in excess of 115 degrees.
- Must be able to tolerate chemicals for cleaning and sanitizing kitchen areas.
- Must be able to lift and carry 50 pounds and be able to push and pull up to 100 pounds in a cart.
- Must be able to push, pull, reach, bend, twist, stoop, and stack.
- Must be able to work at a fast pace and in stressful situations.
- Must be able to tolerate areas containing varying noise levels, illumination, crowds, and air quality including secondhand smoke.
- Must be able to speak, read, write, and understand English and be able to conduct conversations with peers in a distinctive and persuasive manner.
Salary: Starting at $65k per year, depending on experience
