Job Description:

The employee should work with a knife in the dominant hand. Work should be done with a hydrolic cutter to remove the leg. The work will be done at an elevated station while the cows are moving in the main chain.

Work Procedure:

• Place the two knives in the sterilizer
• Make sure the knife sterilizer and leg cutter sterilizer are at the correct temperature
• Notify your supervisor if the sterilizer is not at 180 degrees
• Secure your harness to the safety cord
• Stop the cow with your left hand and make a cut in the rectal part away from the thigh
• Sharpen the knife with steel and place the knife in the sterilizer
• Alternate knives between each animal
• After you finish cutting the rectal part, turn the cow over with your hand to access the legs
• Use the paw cutter to put the paws between the blades
• Use both hands to activate the two switches at the same time on the leg cutter to remove the legs
• Ensure that the legs fall into the hopper so that the legs can be saved
• The leg cutter has to be sterilized between each animal
• Do not sharpen the blades of the cutter
• Only trained employees can sharpen the blades
• Other additional activities to be assigned.
