Purchasing Manager - (Must Have analytical Experience)
Independent Mediterranean style open Kitchen Restaurant Not Affiliated with M&R Hotel Management
Serving signature wood fired pizzas, amazing Mediterranean farm to table dishes in a stylish and worldly setting. In addition, there is a large craft cocktail bar and a refined assortment of wine and beer.
The restaurant is looking for a Purchasing Manager who will be responsible for all food and beverage purchasing for the restaurant. Plan and implement budgets, hire, train and supervise subordinates and apply relevant purchasing processes and procedures.
This position requires exceptional analytical, organizational, and business management skills to oversee the purchasing department of the restaurant.
Key Responsibilities:
- Develops an operating budget for each of the department’s revenue outlets; after approval, monitors and takes corrective action as necessary to help assure that budget goals are attained.
- Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.
- Inspects to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met.
- Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized.
- Helps plan and approves external and internal marketing and sales promotion activities for the food and beverage department.
- Helps plan and approve the organizational chart staffing and scheduling procedures and job description/specifications for all department staff.
- Manages the long-range staffing needs of the department.
- Approves the menus proposed by the Executive Chef for all outlets and special events with CEO.
- Establishes quantity and quality output standards for personnel in all positions within the department.
- Ensures that all legal requirements are consistently adhered to including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages.
- Creates and establishes all supply chains for store.
- Negotiates all pricing for the entire store and each department.
- Research new products and develops an analysis of the cost/profit benefits.
- Maintains food and beverage personnel records.
- Develops and implements policies and procedures for food and beverage departments.
- Establish Sources, Monitoring, Purchasing, Inventory and receiving procedures for products and supplies to ensure proper quantity, quality, and price for all purchases.
- Reviews new techniques for food preparation and presentation in a manner and variety to maximize member and guest satisfaction and to minimize food costs.
- Consults with the Executive Chef and other applicable store administrators daily to help assure the highest level of member satisfaction at minimum cost.
- Develops on-going professional development and training programs for food production, service, and bar production/service personnel.
- Ensures correct handling procedures to minimize china and glassware breakage and food waste.
- Addresses member and guest complaints and advises the General Manager about appropriate corrective actions taken.
- Develops interesting ways of promoting club functions in the dining room, lounge, and other outlets.
- Serves as an ad-hoc member of appropriate store committees.
- Assist in planning and implementing procedures for special store events and banquet functions.
- Maintains appearance, upkeep and cleanliness of all food and beverage equipment and facilities.
- Approves all product invoices before submitting to the accounting department.
- Manages physical inventory verification and provides updates information to the accounting department.
- Responsible for the proper accounting and reconciliation of the Point-of-Sale systems and member revenues.
- Maintains records of special events, house counts, food covers and daily business volumes,
- Supervises the remodeling, refurbishment, and other building design enhancements applicable to food and beverage service.
- Complete periodic china, glass, and silverware inventories as well as all food & beverage inventories
- Maintain personnel files.
- Implement and monitor sanitation, cleaning, and supply chain schedules.
Qualifications:
- Minimum of 3 to 5 years of proven experience as a Purchasing Manager in a high-volume establishment.
- Solid knowledge of restaurant operations, financial management, and administrative processes.
- Excellent verbal and written communication skills with the ability to effectively interact with management.
- Comfortable speaking & presenting in front of both management & peers.
- Must be creative, analytical and demonstrate problem solving skills.
- The candidate must have hands on knowledge of Purchasing procedures including receiving and shipping.
- The individual is also responsible for maintaining good relationships with suppliers with the ability to challenge suppliers for better prices.
- Knowledge of beverage purchasing procedures and basic knowledge of Kitchen equipment purchases is required.
- Must be able to prepare and process requisitions and purchase orders. Coordinate with accounting to ensure accurate and timely payment of invoices. Strong leadership skills with the ability to inspire and motivate a diverse team.
- Excellent problem-solving and decision-making abilities in a fast-paced environment.
- Knowledge of or experience within Sourcing operations
- Knowledge with restaurant business practices
- Experience with purchasing software
- Experience with Excel with VBA & Macro reports
- 1-2 years' experience in Operations
