LOCATION SUMMARY
Vermejo, a Ted Turner Reserve, located in northern New Mexico and southern Colorado, spans over 550,000 acres, making it the largest Ted Turner Reserves vacation property. With its unique location in the southern Rocky Mountains, Vermejo is home to abundant wildlife populations such as elk, deer, pronghorn antelope, bison, black bears, mountain lions, and more. ESSENTIAL DUTIES AND RESPONSIBILITIES
We are seeking a professional PM Sous Chef to work directly with our Executive Sous Chef. The successful employee will employ their culinary skills in maintaining and enhancing a truly memorable guest experience. The ideal employee for this position should desire to be the best every day and be able to perform under pressure in a high stress environment. This position requires working on the line five or more mornings per week and run the prep kitchen throughout the day with co-workers of varying levels of experience.

As a PM Sous Chef, the job responsibilities include, but are not limited to the following:
  • Cook and prepare meals daily following approved recipes for 50 guests and 60 team members.
  • Provide professional leadership and direction to other team members.
  • Prepare work schedules for 15 kitchen team members.
  • Work with the Executive Sous Chef and Executive Chef on menu creation and ideation.
  • Execute offsite events in partnership with the Event Chef as needed.
  • Manage the organization and overall cleanliness of all workspaces and storage areas.
  • Aid in the training of seasonal kitchen team members.
  • Demonstrate proper and safe usage of all kitchen equipment.
  • Additional responsibilities, as assigned by VPR Lodge Management may include but are not limited to dishwashing, painting, deep cleaning, and grounds keeping.
  • All other duties as assigned.

EDUCATION AND/OR EXPERIENCE
A culinary degree is highly preferred, but not required. A minimum of 5 years of high-end cooking experience is required. Must have advanced knowledge of kitchen equipment, including knife handling. Experience with wild game cookery, and remote-outdoor cooking experience is highly preferred. Must be familiar with upscale buffet service and composed plating. Good working knowledge of accepted sanitation standards and applicable health codes is required. Experience working in a luxury hotel/resort setting is highly preferred. Must possess a working knowledge of inventory systems.

LANGUAGE SKILLS
This position requires good communication skills, both verbal and written. The employee must be able to read and follow recipes and directions with accuracy and consistency as well as be able to adjust for high altitude. The employee must be able to effectively present information and respond to questions from groups of managers, clients, customers, and the public. Bilingualism in Spanish is helpful but is not required.

MATHEMATICAL SKILLS
The employee must be able to add and subtract two-digit numbers and to multiply and divide with 10's and 100's. The employee must be able to perform these operations using units of American money and weight measurement, volume, and distance.

REASONING ABILITY
The employee must be able to pay close attention to detail, solve practical problems and deal with a variety of variables in situations where only limited standardization exists. The employee must be able to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

CERTIFICATES / LICENSES
If position requires the operation of a vehicle, the employee must possess a valid Driver’s License or be able to obtain one within 30 days of employment. The employee’s driving record must meet the standards and requirements of the Company and the Company's insurance carrier.

ACCOMODATIONS
Position may require applicant to live on Vermejo headquarters approximately 40 miles from the closest town. Vermejo’s location is approximately 4.5 hours’ drive south of Denver or 4.5 hours’ drive north of Albuquerque.
Vermejo Park Reserve offers single- and double-bedroom dorm room style company housing (subject to availability).

Employee may be subject to sharing a room with one other employee depending on the availability of a single dorm room, and employees will need to provide or arrange for their own transportation to and from Raton for personal supplies.

OTHER QUALIFICATIONS
  • The employee must adhere to Company and Reserve policies and procedures, which are included in the Company’s Employee Handbook.
  • The employee must present documentation establishing both identity and employment authorization within three days of hire, pursuant to federal law.
  • The candidate may be subject to undergo pre-employment drug test, (after offer is given but before applicant has commenced work). Random drug tests are given throughout the year.
  • The Company operates as a drug free/smoke free workplace. Smoking is not allowed on the reserve property, to include but is not limited to, reserve housing, reserve vehicles, reserve offices or on reserve machines.
  • The employee will be required to sign a confidentiality agreement.
  • The employee must have neat and clean personal appearance.
  • The employee will be required to work weekends and be on a 24-hour “On Call” rotating schedule.
