Sunseeker Resort Charlotte Harbor is currently searching for a Lead Pastry Cook/Baker (Part-Time)!

The Lead Pastry Cook/Baker is responsible for maintaining product quality and consistency, preparation levels and execution of bakery items in accordance with hotel standards. You will accomplish tasks by managing your time, including providing support to the culinary team, ending in a positive guest experience.

All duties are performed in accordance with department and Sunseeker Resorts policies, practices, and procedures. 

JOB DUTIES:

  • Reliable and dependable attendance is required.
  • Maintain a positive attitude, especially under high pressure.
  • Prepare pastry products to desired quality, quantity, and presentation.
  • Maintain a quality standard as set by the hotel brand.
  • Assist the team towards achieving exceptional guest service.
  • Maintain preparation levels for a seamless execution.
  • Exercise discretion and independent judgment when evaluating new programs, new services, and new ideas.
  • Stay abreast of property goals in order to create, support and present departmental goals to executive leadership. 
  • Continue to learn and be on the forefront of new technology for the hotel industry.
  • Create ways to further enrich the guest experience by continuously reviewing, implementing, and refining procedures to ensure every opportunity to offer extraordinary guest experiences while maintaining a culture of smiles, retention of luxury standards.
  • Proactively seek guest feedback and liaise with other departments when opportunities present themselves ensuring a seamless and elevated guest experience.
  • Manage guest requests and own all complaints; resolve issues immediately and follow up to ensure the guest’s satisfaction.
  • Develop collaborative relationships and synergy with all support departments such as Convention Sales & Services, Facilities, Security, Front Services, Front Office, F&B, Golf Course and Executive Offices.
  • Foster a management team that possesses and delivers on key strategies of guest service, employee relations, team cooperation, financial responsibility and asset management.
  • Ensure all accounting, payroll and employee relations matters are handled in compliance with company policy.
  • Understands how to read, follow, and maintain standardized recipes, with a proficient understanding of measurement equipment including liquid, dry measuring vessels and weighing equipment including digital scales and baker scale.
  • Ability to follow direction and assist with the production of all required bakery products with the ability to finish all cakes, pastries, and bakery items as trained in an efficient consistent manner.
  • Prepares and finishes required pastry products for all venues, according to standard recipes and specified by outlet requisitions.
  • Maintain the highest level of kitchen cleanliness and organization. Including all coolers, freezers, pastry prep area and equipment up to the State of Florida health codes.
  • Dates and labels all food containers and rotates product as per policies, making sure that all perishables are kept at proper temperatures
  • Operates and sanitizes all equipment in a safe and proper manner. Maintaining complete knowledge of use of equipment, using equipment and tolls only as intended, properly and safely.
  • Perform other functions as needed.

MINIMUM REQUIREMENTS

Combination of Education and Experience will be considered.  Sunseeker Resorts performs criminal background checks on all candidates. Candidates will need to be authorized to work in the US as defined by the Immigration Act of 1986.   • High School Diploma, GED, or equivalent.
  • Minimum of one (1) year shift employee supervisory and training experience.
  • Minimum of three (3) years’ work experience, as a baker or pastry cook position, preferably in a high-volume, multi-venue high quality pastry atmosphere.
  • Ability to test and develop pastry recipes.
  • Knowledge and understanding of Banquet Event Orders, and in turn the following of production charts to prepare the forecasted amounts.
  • Advanced knowledge of mixing and production of traditional pastry techniques, including pate a choux, yeast doughs and gelatinized creams.
  • Can support and perform cutting and weighing of dough, rolling, shaping, proofing and baking.
  • Creatively and consistently finish any plates, pastries, or prepared bakery product as requested.
  • Demonstrates the ability to follow and convert recipes, utilizing appropriate measurement and weighing vessels.
  • Assist with the development of standardized recipes for all pastry items. Ensures that recipes are accurate and updated as needed.

  • Ability to work varied shifts, including weekends and holidays.
  • Excellent customer service skills.
  • Ability to function well under pressure, manage multiple priorities, and meet established deadlines.
  • Must possess mature personal discretion and sound judgment.
  • Excellent organizational, analytical and project management skills, with particular attention to quality and detail.
  • Professional appearance and demeanor.
