The Lead Bartender position is a unique opportunity within the property. This specific role will be in our new fine-dining outlet, Costeno. This position appreciates all forms of beverage service and knows how to tailor a variety of programs for our guests.

Sometimes a guest wants to be introduced to a handcrafted cocktail or a celebratory bottle of wine. Other times a guest just wants a local, favorite brew. We cater to all because what matters to us in the end is that our guests are happy and comfortable in our presence.

This position is made for someone who can think about the big picture and guest details all at that the same time. This person finds passion being present on the floor during service; directly impacting the guest and staff experience.

The Nitty-Gritty:
What exactly you will be doing…
In helping you understand your role in working for a progressive, environment conscious, world class organization, the following is a list of your essential job responsibilities. Please keep in mind that this list is not all inclusive and that you may be asked to perform other job tasks by your supervisors/managers not listed below in the constant quest to provide “out of this world” customer service experience for our guests:

  • Programming. Choosing the right wine, beer and cocktails for each restaurant will be crucial in targeting the right guests while staying in line with the culinary vision.
  • Profitability. Of course you love the creative process of making a new drink. But you’re in business to make money. Keeping a property profitable and fiscally sound is how you sleep best at night. You’ve designed and implemented rigorous checks, standards and inventory controls. Nothing gets by you!
  • Team player. This is a very unique position as you will be working with a very talented group of individuals. You will be working closely with entertainment directors, outlet managers, event directors and hotel managers on a daily basis. They might all have different needs for their event or location…it’s your job and pleasure to make that happen.
  • Communication. Your hand is literally in the pot of each outlet. Happy hour in the casual restaurant, a unique find in the wine bar, a mixology program in the intimate bar, the best vodka on the rooftop lounge and a large bottle selection in our premium bar. Not only do you have to be a mastermind of keeping track of all of this but you have to consistently spread the word about the joy you bring. Managers, hourly colleagues and guests need to be “in the know!”
  • Standardization. Noting goes amiss on the floor because you’ve done all the work in advance. Your team knows exactly what product to pull and how much to prep. They have followed clear recipe direction and usage of materials to create consistent drinks time and time again.
  • It’s Show Time! You thrive in being part of the action and success with your team. No office hours or vendor meetings here. You glide in and out of the bars and outlets managing your team, winning the hearts of guests and even jumping behind the bar. Because why should your team have all the fun!

What qualities are we looking for?
You got skills? If you are able to perform the following, then you have definitely come to the right place…
  • Candidates must have previous hospitality experience in bars, Fine Dining or higher volume nightlife locations.
  • Ability to break down barriers and resolving potential conflicts swiftly and effortlessly
  • Strong communication and presentation skills to all levels of management
  • Creativity and innovation are essential!
  • Ability to think outside the box and approach all issues with a completely fresh approach
  • Ability to anticipate needs and over deliver wherever possible
  • Candidates must think on their feet and use their initiative to solve problems and deliver solutions
  • Comply with all safety and health department procedures, as well as, all state and federal liquor laws
  • Able to change direction and work on multiple project aspects at once
  • Enthusiastic, passionate, able to enthuse and motivate others
  • Leadership ability and behavior consistent with Virgin Hotels Core Values: Fun, innovative, original and personable, and striving to deliver high quality and brilliant customer service

Background must-have:
  • Current, legal and unrestricted ability to work in the United States
  • Associate or Bachelor’s degree preferred but not required
  • Food Service Handler Card and TIPS certification that is currently valid for a minimum of at least 6 months
  • Preferred: 3-5 years’ experience in a fine-dining restaurant or full-service location
