Scope

We are looking for an Executive Sous Chef to join our team at Superfrico within the Cosmopolitan in Las Vegas. The Executive Sous Chef has a passion for food! Whether grilled, roasted, baked or fried, your culinary talent will be a delight! They assist in overseeing and creating signature menu items to create a memorable dining experience at Superfrico. In addition, they are responsible for assisting the Executive Chef for overall kitchen operation while ensuring maximum guest satisfaction, through planning, organizing, directing, and controlling the Kitchen operation and administration. The salary range is $65,000-$70,000 per year.

Primary Job Duties

  • Responsible for leading and creating a world class dining experience for all guests.
  • Directs the preparation, portioning, and garnishment of all foods.
  • Maintains excellent kitchen hygiene conditions at all times.
  • Tests and develops new recipes. 
  • Leads, directs, and assists with the work of others.
  • Controls food and labor costs on a continual basis within approved budgetary controls.
  • Makes recommendations and executes hiring, terminating, suspending, and counseling to the Executive Chef.
  • Maintains knowledge of all state health department regulations, safety guidelines and policies and ensures all conditions and standards are met.
  • Participates in departmental and venue meetings, facilitating the flow of pertinent information from management to Co-Stars.
  • Provides all Co-Stars with proper training and counseling as needed in accordance with policy and procedures.
  • Maintains professional grooming and appearance and acts as a role model according to established grooming and appearance policy.
  • Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.
  • Other duties as assigned.

Requirements

  • Minimum of five years previous experience as senior management in a professional kitchen.
  • High School diploma or equivalent. Culinary degree or formal apprenticeship preferred.
  • Strong written and verbal communication skills with the ability to effectively communicate in English.
  • Excellent customer service skills.
  • Polished appearance and demeanor.
  • Ability to obtain and maintain full knowledge and understanding of company and department rules and regulations, policies and procedures.
  • Ability to add, subtract, multiply, and divide in various units of measure, using whole numbers, common fractions, and decimals.
  • Ability to work calmly and efficiently under pressure.
  • Possess a commitment to quality service.
  • A highly motivated and energetic personality with a strong commitment to excellence in hospitality.
  • Participate and pass background check and drug test.
  • Must have valid work authorization for the US
  • At least 21 years of age.

  • Ability to distinguish letters, numbers and symbols.
  • Ability to comply with Policies and Procedures, Job Description, daily memorandums, chemical labels (MSDS) and other instructions.
