Job Description

As a member of the CPZ Culinary Leadership Team, your position is pivotal in providing the support and guidance needed for the success of the CPZ Culinary Team. Our Chefs are passionate about developing innovative, focused, and thoughtful individuals that will use a guest-focused approach in all applications of their job functions from planning service during pre-shift meetings and accommodating spur-of-the-moment requests to all steps of food production and maintaining the organization and cleanliness of work areas.

As the Executive Chef of Events, your responsibilities include: staffing, training, developing, and supervising the restaurant team, crafting menus, effectively controlling costs, managing inventories, assisting wherever needed, and ensuring the team adheres to our culinary standards and is consistently operating at the highest level.

What you will be doing:

  • You consistently offer professional, friendly and engaging service
  • You have full comprehension and execution of Culinary Culture Manual and Union Standards
  • You oversee the daily operations of the Event and Venue Kitchens
  • You act as the role model for our service promises and ensure all direct reports have a keen focus on delivery of our service essentials
  • You are responsible for maintaining staffing levels through proactive recruiting
  • You ensure that performance management and colleague training/development occurs in a timely and consistent manner
  • You ensure full compliance to Hotel operating controls and seek innovative ways to improve performance regularly
  • You maintain proper storage procedures as specified by Health Department and Hotel requirements
  • You ensure all municipal and state laws regarding hygiene and security are respected, as well as ensuring that colleagues adhere to all health and safety requirements
  • You minimize waste and maintain controls to attain forecasted food costs
  • You restock items that were depleted during the shift
  • You promote teamwork within the Kitchen department and maintain strong working relationships with all supporting departments; accountable for EcoSure compliance and score requirements
  • You perform mock Health & EcoSure Audits and understanding past results and the current regulations
  • You inspect the cleanliness and working conditions of all tools, equipment and supplies
  • You ensure all events are executed according to Banquet Event Orders
  • You monitor performance of assigned staff and ensure all procedures are completed to the department’s standards
Qualifications

Your experience and Skills include:

  • Previous experience in Luxury environment is required
  • 5+ years of experience as a Banquet Chef, Chef de Cuisine or equivalent, preferably in a fine dining environment or five star property
  • High school diploma or equivalent training certification
  • Desirable: Food handling/sanitation certification
  • Proven leadership and managerial skills supporting an environment of colleague growth and development, interdepartmental teamwork and exceptional customer service;
  • Current on all culinary trends and active in the furthering of his/her own culinary development
  • Extremely creative with strong service skills and demonstrated ability to energize a diverse team of culinary professionals
  • Proven financial planning skills with the ability to analyze date and trends and implement strategies for improvement
  • Experience and comfortable with television and other media promotional venues
  • Computer literate
  • Ability to perform job specifications with attention to detail, speed, and accuracy
  • Ability to work cohesively with co-workers as part of a team
  • Ability to use all senses to ensure quality standards are met
