Among them you will find The Condado Vanderbilt, the standard of excellence for luxury resort hotels in San Juan and The Caribbean; La Concha Resort, your quintessential San Juan beachfront resort-chic retreat, and a hot nightlife destination, and San Juan's all-adult boutique hotel, Condado Ocean Club, a modern oasis in the heart of the city. As well as Casino del Mar, and world-renowned restaurants like STK San Juan and Serafina.

Responsibilities
  • An Executive Chef has a huge range of duties and responsibilities within the kitchen. Leading Kitchen Operations for Property.
  • Leads kitchen management team. Providing direction for all day-to-day operations.
  • The head chef performs many administrative duties, including ordering supplies.
  • Provides guidance and direction to subordinates, including setting performance standards and monitoring performance.
  • Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
  • Demonstrate new cooking techniques and equipment to staff.
  • Supervises and coordinates activities of cooks and workers engaged in food preparation.
  • Overseeing the financial aspects of the department including budgeting, pricing, and cost control.
  • Develops and implements guidelines and control procedures and expenses for purchasing and receiving areas such food cost, supplies, uniforms and equipment.
  • Establishes goals including performance goals, budget goals, team goals, etc.
  • Communicates the importance of safety procedures, detailing procedure codes, ensuring employee understanding of safety codes, monitoring processes and procedures related to safety.
  • Participates in the budgeting process for areas of responsibility. PNL's etc.
  • Knows and implements the brand's safety standards.
  • Determines how food should be presented and create decorative food displays. Recognizes superior quality products, presentations and flavor.
  • Ensures employees compliance and maintain required food handling and sanitation certifications. Health Safety.
  • Prepares menu or/and cook foods of all types, either on a regular basis or for special guests or functions.
  • Establishes guidelines so employees understand expectations and parameters. Ensures employees receive on-going training to understand guest expectations. 
  • Identifies the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills.
  • Interacts with guests to obtain feedback on product quality and service levels.
  • Interacts with the Banquet Chef and Catering Department on training regarding food knowledge and menu composition.
  • Ensures disciplinary procedures and documentation are completed according to Standard Operating Procedures (SOP's).
  • The Executive Chef is expected to modify and create new menus as needed so that they remain effective for the purposes throughout all F&B Departments.
  • Assists the executive team and General Manager to manage all areas of the hotel in accordance with brand standards to achieve a friendly atmosphere of superior guest service and product quality.
  • Displays leadership in guest hospitality, exemplifies excellent customer service and creates a positive atmosphere for guest relations.
  • Assist in property as MOD. (Manager on Duty)
  • Must have full knowledge of food & beverage products.
Qualifications
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • He/she must possess excellent written and oral communication skills, strong leadership skills, analytical and problem-solving skills, good customer service skills and multi-tasking skills.
  • Should work well under pressure, even with minimal supervision.
  • Fully Bilingual (Spanish/English).
  • Must have computer skills (Excel/Word/Power Point)
  • Encourages and builds mutual trust, respect, and cooperation among team members.
  • Ensures property policies are administered fairly and consistently.
  • Solicits employee feedback, utilizes an "open door" policy and reviews employee satisfaction results to identify and address employee problems or concerns.
  • Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team.
