PRIMARY
RESPONSIBILITIES:
Provide quality,
consistency and member focused environment.
As Exec Chef you will oversee all kitchen personnel and direct the
functions of their individual duties. You will assign Sous Chefs direct reports
and delegate scheduling, prep, and sanitation responsibilities.
DUTIES: Review, screen, interview and conduct knife skills
tests as well as kitchen cooking test for all candidates.
Determine how much training each new hire will need to work each assigned station.
Oversee daily prep /assign tasks as needed.
Conduct monthly inventory. Enter data for inventory.
Oversee prep and Sous Chefs while they conduct inventory.
Must be able to execute the data entry needed for the
POS/KDS: assign “buttons” locations for each menu item. This includes changing
prices as needed, determining chain, modifiers and printer locations.
Directly supervise the daily preparation of soups, sauces, and daily features.
Daily features must include one plant forward plate.
Features are intended to generate interest in items other than the Long Beach Country Club “classics”. They need to change daily.
Coordinate communication with banquet manager and events planner to plan and execute all functions inside and outside of club realm.
Respond to member specific emails for “special requests” i.e. Tenderloin, salad, bread and dessert for 15 – precooked or uncooked
- Plan food offerings(menu) for all club events: Invitational,
- Holiday parties, Captains Choice, children’s pool parties/bridge menus,
- Order all perishable, shelf stable and to go products
- for all 3 venues. half-way house, patio, and main clubhouse.
- Consistently reach food cost as directed by GM and House Chair. Maintain standards of quality, cost, eye appeal and flavor of foods.
- Ensure proper training for maximum profitability and establish controls to minimize food and supply waste and theft.
- Make recommendations for maintenance, repair and upkeep of the kitchen, its equipment, and other areas of the club.
- Operate food production equipment according to manufacturer’s instructions. This includes Sous Vide.
- Communicate with office manager and controller for correct coding of all supplies/food. Provide inventory numbers by the 5th of every month.
- Maintain constant communication vendors and verify receiving totals.
- Assigns employee daily meals lunch and dinner to appropriate team members.
- Oversee the daily “to go” process for lunch and dinner.
- Direct nightly pre shift with service staff.
- Coordinate with FOH supervisors to conduct menu
- knowledge tests.
- Conduct daily meetings with Sous Chefs and any
- culinary team members under your direction.
- Conduct yearly evaluation for merit increases.
- Provide corrective action where needed and follow up on
- all paperwork for unemployment or discipline.
- Maintain the highest sanitary standards in all areas.
- Local Health Inspection must stay within the standards developed over the
- last 12 years. Zero violations and maintain 3 times a year inspection
- status.

- personal cleanliness rules at all times
Long Beach

Executive Chef must encourage questions and practice patience. The Executive
Chef must be prepared to operate lunch and dinner service 6 days a week in May,
June, July and August. September, October, November 5 days a week. December –
open as needed for parties as well as Thursday, Friday, Saturday for dinner. January, February and March is Friday and Saturday
nights for dinner service. April ….
