Director of Operations - Quick Service Restaurants
The Company

Yoshinoya America is a wholly owned subsidiary of Yoshinoya Holdings, the parent company based in Japan. With a historythat goes back to 1899 and more than 2000 stores worldwide, Yoshinoya has been both leader and innovator in the QSRJapanese segment. The American subsidiary has over 100 stores (70+ company owned) and is Southern California's bestkept secret.

Rebooting Yoshinoya America's Fortunes

Yoshinoya America has quietly reinvented itself over the past 4-years. While still proud of our value proposition, we haverebranded and remodeled most of our stores as "Yoshinoya Japanese Kitchen." We've broadened our appeal in themarketplace by introducing new items and providing guests with more options. Deferred maintenance and antiquateddesigns have been replaced by a striking new store design and improving guest experience. Systems and procedures haveundergone a complete makeover with the help of technology and better equipment. We have also committed to developingtraining systems and adding resources to maximize the advancement opportunities of our employees. These tactics hascontributed to a nearly 30% increase in sales, reversing 5 years of eroding sales and profits. With the problems of the pastbehind us, we are now entering an exciting growth phase with plans to expand south into San Diego and north into Centraland Northern California.

The Opportunity

The Director of Operations (DO) will oversee 5 - 6 district managers who supervise 4 - 8 restaurants each. This is a fieldbased position, reporting to the VP of Operations. The position will be responsible for delivering sales and profits based ontheir ability to teach others and hold them accountable for executing company systems, building cohesive teams, and, mostimportantly, helping us develop a teaching culture at every restaurant.

Responsibilities

Work with and through District Managers to accomplish the following objectives:

  • Work closely with senior management to improve existing processes and/or implementing new procedures to addressoperational problems that block or slow our progress.
  • Recruit, hire, and train store management to staff all restaurants with employees that meet position qualifications andperformance expectations. Establish and maintain a disciplined approach in providing feedback, encouragement,coaching, training and maintaining accountability for meeting results.
  • Establish clear expectations for DMs and GMs for developing a pipeline of candidates in each store who have theaptitude and desire to advance into store leadership positions including Certified Trainers, Shift Managers, AMs andGMs.
  • Working in conjunction with the Training Department, develop Certified Training Restaurants in each district where newmanagers get the training needed to prepare them for running shifts and supervising a store.
  • Ensure that sales are accurately forecasted and labor is effectively deployed on the weekly schedule, and in real timeduring the shift, in accordance with the labor target.
  • Ensure that cost controls are effectively executed on a consistent basis, including but not limited to food variance,supplies, and repairs and maintenance. Quickly identify problem areas and ensure that a corrective action plan isimplemented to address gaps in performance, resulting in fixing the problem.
  • Ensure that all marketing promotions are communicated and executed effectively, including product training, hospitality,and speed of service.
  • Ensure that safety is maintained as a priority at all times, including but not limited to food preparation, employeehygiene, temperature checks, and employee work behaviors.
  • Ensure that food quality is maintained in accordance with company standards by effectively managing the following:Food ordering, storage, and rotation, preparation, presentation, and holding times.
  • Ensure that the maintenance of all store facilities and equipment are properly maintained by training store managementand working in conjunction with the Facilities Department and approved vendors.
Requirements
  • Solid 5+ years in multi-unit management for quick service restaurants with a minimum of two yearsteaching and supervising district managers.
  • Excellent verbal and written communication skills.
  • High detail-orientation with an ability to work in a dynamic, fast-paced, team environment.
  • Extremely organized with excellent multitasking and time management skills.
