The Director of Food and Beverage forms part of the Hotel Leadership team who collectively make key strategic and operational decisions. The Director manages the Food & Beverage Operation which includes all restaurants, bars & lounges, banqueting, room service, and private bars. The primary responsibilities for this position are to ensure our guests receive the highest level of Food quality and service, manage and develop a team, devise and monitor an annual budget, manage labor control and operating expenses, and develop relationships with key suppliers and industry associates.
We are looking for individuals who have a solid knowledge of Food & Beverage, have creativity and flair, and can evidence good business acumen, a strong work ethic, and people-management skills.
An ideal candidate must be an experienced restauranteur with a proven track record for managing successful multi-unit and multi-concept operations within a high volume, casual-elegant, and polished dining. The Food and Beverage Director will work closely with the General Manager, Private Events Manager, and Chef de Cuisine to ensure flawless execution before, during, and after all events and daily a la carte and private dining restaurant service. This position supports the daily operations with vendors and suppliers of Food and beverages and works closely with all other aspects of building operations.
The successful candidate will be responsible for the following:
ESSENTIAL DUTIES & RESPONSIBILITIES:
An effective leader selects the best possible candidate for each position and provides structure, direction, feedback, recognition, and accountability. The position will be responsible for building a collaborative team and promoting ongoing growth for the team members within the culture and policies.
- Developing and maintaining strong relationships with existing and new vendors/suppliers
- Assisting with sourcing and qualification of potential vendors
- Negotiating, coordinating, and executing all aspects of purchasing and material planning
- Preparing POs and P&Ls
- Coordinating quotes and orders with the Sales team
- Coordinating delivery schedules and logistics with the production teams
- Curating, and managing invoicing and the in-house inventory of beverages and rentals
- Act as liaison for all cross-functional partners and ensure vendors provide and receive information in addition to providing appropriate services
- Maintains accurate P&L and margin reporting
- Oversee the inventory forecasts of liquor, wines, and beverages
- Prepares and provides detailed weekly status reports to the Events Director and Sales Director
- Meet and exceed established margin goals as communicated by the Sales Director and the Events Director
- Track and report key functional metrics to reduce expenses and improve effectiveness
- Forecast price and market trends to identify changes to balance buyer-supplier power
- Process orders and coordinate with Finance on issuing of PO's and invoices to and from vendors and customers
QUALIFICATIONS:
We are looking for a leader who is proactive and skilled in hard negotiating:
- Preferred Bachelor’s degree (BA or BS) or equivalent education combined with work experience in the hospitality, food and beverage or event industry
- At least 2 years of working experience as an F&B Director, or restaurant General Manager, especially in the hospitality industry with strong culinary and service reputations, lifestyle, and/or luxury experience preferred
- Proven experience in sourcing and vendor management
- Highly professional written and oral communication skills required
- Ability to prioritize and plan work activities, be detail-oriented, organized, and maintain confidentiality
