JOB SUMMARY:
Reporting directly to the Vice President of Food and Beverage this position focuses on driving sales revenue by cutting and controlling costs, improving operating efficiencies, and driving revenue through strategic programs for Harrah's, LINQ, and Flamingo.
This position will be responsible for setting medium- and long-term goals to drive revenue as well as lead the planning, design and execution of high-impact initiatives across sales, online marketing, finance, operations and other business function.
ESSENTIAL JOB FUNCTIONS:
  • Maintain strong understanding of key corporate strategic initiatives and provide updates to Vice President of F&B as project status changes, issues involving execution emerge, and ensure team communication and support.
  • Identify growth and process-improvement opportunities and communicate strategies to Vice President of F&B. Communicate revenue management strategic vision to outlet management following.
  • Design and conduct detailed research and analysis. Measure, track and report results.
  • Oversee department labor and over-time and deep dive into departments underperforming.
  • Analyze sales and revenue data, as well as make presentations to Vice President of F&B on recommendations.
  • Perform cost analysis on menu items and understand competitor pricing.
  • Implement pricing strategies based on future demand, current market trends, and historical data.
  • Study the profitability and popularity of menu items using Avero Menu Engineering tools to influence the placement of these items on the menu and pricing.
  • Direct oversight over online reservations through UrVenue for sportsbook and lounge operations to drive advance bookings.
  • Study OpenTable reservation lists, reports and previous records, covers by hour to forecast customer traffic and number of seatings required for specified period of time.
  • Manage OpenTable restaurant pages to ensure outlets are properly marketing menus and promotions.
  • Examine food samples and food service records and other data to determine sales appeal and cost of preparing and serving meals and beverages in restaurants to determine market lists. Work closely with Sourcing to ensure best product and best price.
  • Create structured sales incentive programs for outlets designed around selling high profit items and increasing overall category sales.
  • Assist in setting monthly and annual financial goals.
  • Evaluate and provide input to expense reduction initiatives and work with operators to complete these initiatives.
  • Create daily reports for department to ensure revenue, labor, supplies and COG targets are met.
  • Build a work environment that promotes teamwork, partnership, recognition, mutual respect, performance feedback / management, and employee satisfaction.
  • Continuously find efficiencies between three properties through labor, ordering, COGS, supplies.
  • Ensure all three properties stay within beverage program regulations while optimizing product placement, pricing, and options.

QUALIFICATIONS:
  • At least 5 years of experience in food and beverage in the hotel, casino and and/or restaurant industry, possess overall knowledge of Food and Beverage preparation and presentation as well as analytics.
  • Ability to establish guidelines for proper staffing to maximize efficiency and minimize labor costs.
  • Organizational skills to function effectively with attention to detail while meeting established deadlines.
  • Work in a fast-paced, busy, and somewhat stressful environment.
  • Perception and awareness of individual needs, the ability to handle all situations professionally and excellent interpersonal skills to deal effectively with guests, management and employees.
  • Excellent customer service skills.
  • Ability to lead and mentor a team.
  • Have interpersonal skills to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • Advance knowledge of PC software (MS Word, Excel, Access, Outlook, etc.) as well as Avero.
  • College education or equivalent, hotel or business administration degree.
  • Able to effectively communicate in English, in both written and oral forms.

Preferred:
  • At least 2 years of experience as Food and Beverage Director in a 4 or 5 Diamond property, with high volume banquet business, expertise in budgeting, forecasting and capital expenditures.
  • College education or equivalent, hotel or business administration degree.
  • Previous experience working in a similar casino/hotel or resort setting.

Must be able to maneuver around property. Must be able to sit and stand for prolonged periods of time. Must be able to operate a computer, telephone, typewriter, copier and fax machine. Must have manual dexterity to operate all office equipment. Must be able to tolerate areas containing second hand smoke.
