Tree House Brewing Company is looking for a Director of Culinary Operations who will be responsible for creating, directing and overseeing all aspects of Tree House’s food service programming for all of our locations within Massachusetts and Connecticut. Tree House’s pizza program is currently a single-unit operation located at our Deerfield, MA brewery and taproom which has received such acclaim we will be rapidly expanding to our other locations. The Director of Culinary Operations will build out the systems and SOPs to provide the most delicious food created with the highest quality ingredients. This Director of Culinary Operations must be driven to unify the highest standards of food offerings at each location and to deliver product excellence on par with Tree House Brewing Company’s renowned reputation of creating the finest beverages on the planet. This is not simply a Chef’s role; this is a Leader’s role requiring a strategic operations, hands-on approach to our culinary program.

This full-time position requires travel between Tree House locations on a weekly basis. Tree House locations include Charlton, MA, Deerfield, MA, Sandwich, MA, Tewksbury, MA and Woodstock, CT, with more locations to come.

The Director of Culinary Operations will be responsible for the planning and supervision of the entire food service operation for Tree House Brewing Company:

  • Must show a demonstrable understanding of what makes great pizza great and a demonstrable understanding of what makes a great burger great
  • Refuses to accept anything less than perfection in the implementation of Standard Operating Procedures
  • Remains nimble while achieving operational and financial goals in a dynamic environment
  • Delivers flawless food quality, presentation throughout the company’s differing operating models and programming
  • Collaborates on projects, with defined objectives, methods, timetables and budget to support Tree House’s strategic plan with regards to our food service program.
  • Conducts spot and quarterly unit audits to ensure the highest level of standards and compliance (e.g.quality, presentation, food storage, sanitation)
  • Enforces state and local Health Department regulations and provides operational direction to reduce property liabilities while partnering with TBHC’s Regulatory Specialist
  • Collaborate with the Project Delivery Manager, KEC’s and other contributors on foodservice spatial design, and equipment specification/manufacturer recommendations to optimize efficiencies
  • Manages and tracks performance through oversight of food and labor costs, daily sales, invoicing, and inventory.
  • Establishes staffing pars based on specific location volume, continually evaluating culinary team members individual performance and impact to the operation, including corrective actions, and terminations
  • Oversees hiring standards and process for all unit-level Culinary Team Members
  • Conducts orientation, training, and ongoing development of unit-level Culinary Team members
  • Coordinating the food service with the Senior Events Manager for special onsite events, both public and private
  • Coordinating the food service with the Retail Taproom management teams at each location
  • Identifies, hires, and develops unit-level kitchen leads to ensure product excellence and labor efficiency through daily shift execution
  • Plans and monitors purchasing and receiving procedures to ensure proper quantity, quality, and price for all purchases
  • Manages third-party relationships with suppliers, equipment service providers, food trucks and caterers
  • Ensures all waste reduction, energy management, preventive maintenance and other standards are consistently met

Role Requirements:

  • 7-10 years of Food Service experience in a fast paced retail environment.
  • Minimum of 5 years of relevant experience in a multi-unit role, overseeing food operations required.
  • Proven ability to lead effectively through high-pressure situations and high-volume operations
  • Demonstrated knowledge of managing compliance, ordering, budgets, forecasting, inventory and labor for a food program
  • Ability to work nights and weekends as needed
  • Reliable transportation for weekly travel between all THBC locations
  • Capable of resolving escalated issues arising from operations and requiring coordination with other departments
  • Ability to communicate effectively and professionally with other employees, leadership, guests, and vendors
  • Training in food service sanitation and possession of ServSafe food handlers certification required
  • Culinary degree or related discipline preferred but relevant experience and technical abilities will be considered
