Job Title:Dining Services Director

Location: 3935 Sunnyside Drive Harrisonburg VA 22801

Position Overview & General Responsibilities: The primary responsibilities of the Dining Services Director include but are not limited to overseeing dining operation in Assisted Living and Healthcare. Organizing all dining activities for the licensed areas and ensuring the quality of our dining program. The Dining Services Director holds a vital role in administrative duties, leadership standards, maintaining food safety, menu preparation, catering, and budget needs.

  • Food Safety, Sanitation, & Regulations: Maintain knowledge and comprehension of food safety and sanitation. Establish, revise, and maintain policies and procedures for compliance with all applicable food safety and sanitation standard. Support safety and sanitation standards that meet Health Department regulations. Complete and ensure staff completes serve-safe certifications. Maintain familiarity with and be able to analyze/comprehend rules and regulations in food sanitation, safety and other related fields and ensure that Sunnyside remains in compliance. Ensure staff adheres to state sanitation requirements. Oversee the maintenance of all kitchen equipment and confirm kitchen equipment is in good working order. Maintain knowledge of and ensure compliance with ABC laws and regulations.
  • Menu Preparation & Catering Events: Create and develop menu cycles utilizing basic principles of nutrition and including resident and regional food preferences. Ensure Menu cycles are developed and updated at least bi-annually. Incorporate basic principles of nutrition in menu planning and meet the nutritional needs of residents. Understand and comprehend a variety of labels and diet information cards. Plan and provide healthy choices in the menu cycle and maintain resident satisfaction. Supervise standardization of recipes and portion and cost control for the department. Adjust recipes and keep daily production records to minimize waste and leftovers. All kitchen equipment is safe to operate. Ensure events are carried out attractively and with high customer satisfaction. Continually look for, evaluate, and implement new ideas. Visit new facilities, attend conferences and/or attend trade shows to keep abreast of new trends in the food service industry.
  • Hiring & Scheduling: Participate in and work with Human Resources in the selection of candidates who are interviewing for all Dining Services positions. Perform interviews for open dining positions, and ensure appropriate staffing level is maintained. Schedule and direct the work of the department staff and evaluate if the work completed is as described in the job descriptions, and ensure staff work quality is satisfactory. Review and approve hours worked by staff. Maintain staff schedules bi-weekly. Ensure that appropriate staffing levels are maintained with qualified and trained staff. Employees are appropriately trained in a timely manner for their jobs. Oversee facility Registered Dieticians and perform annual evaluations.
  • Budget: Prepare and administer the operational budget for the Dining venues. Meet guidelines for budget and complete in a timely manner. Evaluate weekly cost control reports and maintain costs within the budget. Develop and maintain annual capital expenditures budget and plan. Provide plan to administrator for budget development purposes. Requisitions and/or purchases capital expenditures as approved in budget. Obtain all required approvals prior to making capital purchases. Establish purchasing and inventory control procedures.

Requirements:

  • Education and experience equivalent to associate’s degree in food service or related field.
  • Certifications as a Food/Dining Service Director and Dietary Manager for the state of Virginia.
  • Management skills required; experience preferred.
  • Ability to work with confidential information and maintain its’ integrity.
  • Strong written and verbal communication skills.
  • Ability to multi-task while maintaining attention to detail and having good organizational skills.
  • Operates personal computer, printer, copy machines and other general office equipment. Familiar with Microsoft Office.
  • Strong customer service skills; maintain a hospitality approach when engaging all individuals.

  • General kitchen environment with normal lighting levels, temperature ranges, air quality and ventilations (some food aroma) and noise levels.
  • Lifts, carries, pushes or otherwise manipulates equipment and office materials weighing up to 50lbs. Always use proper lifting and moving protocols and techniques. Must have ability to walk, stand, bend and mobilize throughout campus for periods up to 8 hours or as required by event.
  • Exposure to various chemicals and some slick floors. Minimal hazards commensurate with food preparation if normal safety precautions are taken.
