Correctional Food Services (CFS) is based in Dallas, Texas and is a family-owned and operated business formed in May 2003. CFS’ reputation for Quality, Service and Security has been earned by offering its correctional clients a personalized food service management program patterned to each client’s particular needs and requirements and directed towards achieving 100% customer satisfaction. CFS currently provides commissary and food management services to more than 17 correctional facilities (including multi-site locations) in Louisiana and Texas . Reports to the Food Service Manager who is responsible for all food service management operations at St. Martin Parish Sheriff’s Office jail facility.

General Purpose of the Job:
Manage production of meals for and on behalf of Facility inmates during breakfast, lunch and/or dinner periods. Dinner meal will be a cold meal for Facility inmates, and hot meals will be served for breakfast and lunch. Hours will generally be from 3:30 a.m. to 1:30 p.m., and your schedule will generally be 3.5 days on, and 3.5 days off. On the half day, you will generally work from 3:30 a.m. until about 8:00 a.m. The workweek will be comprised of approximately 32-38 hours per week, but could be more or less. Prepare wholesome, palatable and nutritious meals for the inmates of Facility. All meals will meet the recommended daily allowances as developed by and/or approved by the American Correctional Association, The American Medical Association and the National Academy of Sciences.
Essential Duties and Responsibilities:
· Directs and manages departmental operations during the Food Service Manager’s absence.
· Directs all cooks and oversees production schedules of the inmate labor provided.
· Assists with inventory record keeping and control.
· Checks daily sanitation schedules and reports.
· Establishes production guidelines for the following week’s menus.
· Directs and maintains work responsibilities for inmate workers as needed.
· Reviews tray assembly guidelines with kitchen staff before each meal period.
· Reviews daily production records to assess shortages or overages.
· Reviews with the shift cooks all special diets needed for meal service.
· Conducts a pre-briefing with all available kitchen staff to review responsibilities and special needs for the execution of each meal.
· Directs sanitation procedures for each shift.
· Monitors safety and security procedures during and after each production period.
· Advises Food Service Manager of any changes to the approved distribution schedule.
· Maintain an open relationship and act as a liaison with Facility and CFS.
· Attend any required staff meetings at the correctional site as required
· Submit weekly time sheets for submission to payroll and maintain attendance calendars
· Maintain all CFS areas/equipment/products in a neat, clean, and orderly manner and maintain American Correctional Association & American Jail Association standards/guidelines when applicable
· Attend required annual on-site security classes and remain current in required certifications.
· Ensure compliance with CFS policies and procedures outlined in the CFS Handbook.
· Complete miscellaneous duties assigned by CFS Management. Training will also be provided in safe handling of food and kitchen operations.
Supervisory Responsibilities:
· This job may have supervisory responsibilities as it relates to inmate labor provided by Facility.
MINIMUM REQUIREMENTS:
Education and/or Experience:
High school diploma at a minimum. Associate's degree (A. A.) or equivalent from two-year college or technical school or six months to one-year related experience and/or training, in particular in a correctional environment (preferred); or equivalent combination of education and experience are preferred.

· Valid Driver’s License
· DOC ID pass
· SafeServe designation
· Satisfactory Completion of History Check

Other Qualifications:
· Must qualify for and maintain correctional facility security clearance
· History check, credit check and MVR check
· Must complete safe handling of food training
Physical Demands:
While performing the duties of this job, the employee must often talk or hear, is regularly required to stand, walk, sit, use hands and reach with hands and arms and occasionally climb or balance, stoop, kneel, crouch, or crawl. The employee must regularly lift up to 25 lbs. and occasionally lift up to 50 pounds.
Position Type/Expected Hours of Work:
This is a full-time position, working approximately 32-38 (+/-) hours per week. Early morning work (beginning at about 3:30 a.m.) will be required. Benefits eligible position (medical, dental and vision insurance, among other benefits).
