Expectations
- In addition to technical culinary skills, the ideal candidate must have strong interpersonal and communication skills, proficiency with Microsoft Office applications, experience being accountable for a restaurant P&L, and the desire to learn and contribute.
- Lead & manage the BOH staff & daily operations including hiring & firing, scheduling, prep, ordering, training, inventory, and food cost management.
- Elevate & push the kitchen and work in tandem with the FOH manager to provide the best dining experience possible.
- Create menus based on the seafood focused concept that River Twice is known for.
- Have viable discussions with the chef about new dishes including plating & sourcing.
- Monitor hours of BOH employees to minimize overtime as much as possible.
- Weekly check-ins to discuss upcoming events, team members & general operations.
- Communicate changes in both the menu & operations.
- Maintain a minimum of 4 additions on the menu nightly.
- Ordering and receiving, quality-control checks for all food and supplies delivered.
- A working knowledge of all kitchen machinery & equipment to ensure that all equipment is always running properly.
