Candy Maker / Kitchen Operator / Cook 1st Shift 5:30 - 2:00; 2nd Shift 1:30 - 10:00
SUMMARY
Perform all duties associated with the operation of the Automated Kitchen and its Auxiliary Equipment.
ESSENTIAL DUTIES AND RESPONSIBILITIES
This list of duties and responsibilities is not all inclusive and may be expanded to include other duties and responsibilities as management may deem from time to time.
Food safety or quality responsibilities within job. All staff are responsible for reporting food safety and quality issues to those that can initiate action.
Responsible for downloading correct recipe from the automated kitchen computer per written formula.
Responsible for mixing of additional manual ingredients based on written formula using various auxiliary equipment.
Monitor the cooking process following precise temperature and timing requirements as identified in written procedures.
When cooking process is finished, signals mogul operator that batch is ready to be deposited.
Responsible for the automatic transfer of slurry from the weigher to the tempering and buffering vessels.
Maintains written log of each batch of candy processed, recording own name, time, date, starch log number, temperature and refractometer reading, as appropriate.
As necessary cleans all equipment between batches and change overs.
Inspects all production to ensure compliance with specifications for that particular product. Complete all paperwork which is required, including start-up checklists, batch tickets and other required paperwork.
May work in other departments and will perform other duties as assigned.
Coordinates production activities with procurement, maintenance, and quality control activities to obtain optimum production and utilization of machines and equipment.
Fill in department gaps (manual labor) when short staffed or as needed.
Responsible for the quality of their work and implementation of the food safety/quality procedures applicable to the processes that they perform.
Report all safety incidents.
Responsible to report any food safety/quality problems to personnel with authority to initiate action – SQF Practitioner or direct supervisor.
QUALIFICATIONS

EDUCATION/and or EXPERIENCE
High school diploma or general education degree (GED); three (3) to five (5) years prior related work experience or nine (9) months structured on the job training. Educational equivalency acceptable.
LANGUAGE SKILLS
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of employees of organization.
MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ration, and percent.
REASONING ABILITIY
Ability to apply common sense understanding to carry out furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
