Description
Do Great Things! Durham Technical Community College is hiring an adjunct instructor in the Culinary Arts Program. The adjunct Bakery and Pastry Arts Instructor - Correctional Programs will perform a variety of routine duties, as needed, to teach a full range of technical skills and principles relative to baking and Pastry Arts. To provide instruction in the Baking and Pastry Arts course including lecture and lab components. The instructor must be able to facilitate student learning as it relates to established learning outcomes and conduct a daily assessment of student performance in the classroom.
Examples of Duties
Teaching Performance:
  • Facilitate the learning process by designing and implementing instructional activities that maximize student learning; this includes lesson plans and activities for each class meeting.
  • Lecture and demonstrate appropriate teaching and learning strategies to communicate subject matter to students.
  • Adhere to the departmental course guidelines and ensure that the content covers competencies.
  • Order supplies and materials for labs; supervised and prepare lab activities and assignments as needed.
  • Modify, where appropriate, instructional methods and strategies to meet diverse student needs.
  • Contribute to the selection and development of instructional materials following course objectives.
  • Fulfill the duties of clinical or lab instructor in the supervision of students as applicable.
  • Ability to operate and move heavy equipment while demonstrating safety in usage.
  • Assume responsibility for maintaining all required college records including attendance and grade reports, etc.
  • Must complete all mandatory training.

Evaluation of Student Learning
  • Establish and follow meaningful learning objectives.
  • Develop and explain methods that fairly measure student progress toward course objectives.
  • Evaluate student performance fairly and consistently and return student work promptly to promote maximum learning.
  • Maintain accurate records of student progress and submit final grade rosters to college and correctional programs supervisor each semester according to established deadlines
  • Evaluate students and provide them with specific feedback.
  • Assist in maintaining a clean lab and clean equipment.
  • Provide adequate safety measures for students and security measures to ensure the safety of laboratory equipment.

Minimum Qualifications
  • Associate degree in Baking and Pastry Arts, or related field.
  • 2 years of professional industry baking experience
  • Computer skills including Microsoft Word, Excel, and PowerPoint.
  • Teaching experience is required; community college or Prison Education teaching experience is preferred.
  • Past or present work experience as a pastry chef or baker in restaurants, hotels, and retail is required.

Special Requirements; Licenses/Certifications; Other
  • Must have current ServSafe Managers certification by the National Restaurant Association
  • Evidence of Baking and Pastry competency, which may include ACF certifications
  • Applicant must be able to complete and pass the NC Department of Public Safety background check.

  • Bread Production (quick-breads, yeast-breads, rolls, etc.)
  • Doughs (laminated, puff pastry, croissants., etc.)
  • Cake production and decorating (piping, fondant, icing, etc.)

  • Pastry Elements (pate a chou, fillings and finishing, crepes, souffle, cream puffs, eclairs, etc.)

Knowledge
  • Possess effective English communication skills, both written and oral, and be able to relate to and communicate well with individuals from all socio-economic levels and ethnic groups.
  • Working knowledge of instructional theory, basic education principles, practices and methodologies, the developmental process, competency-based curricula, and general classroom and lab practices.
  • Possesses good organizational skills; knowledge of record-keeping procedures, including the ability to collect and organize data and information.
  • Working knowledge of modern office practices and procedures, including applicable computer operations and software, i.e., Microsoft Office Suites, Canva, and student record programs.
  • Ability to establish and maintain appropriate levels of authority as well as create an atmosphere of support and confidence for students.
  • Excellent problem-solving and critical-thinking skills.
  • Must possess the required knowledge and be able to explain and demonstrate, with or without reasonable accommodations, that the essential functions of the job can be performed.
  • Extensive knowledge of subject matter and relevant topics and issues in the teaching discipline.
  • Knowledge of effective instructional techniques and innovative modes of course delivery adaptable to a variety of learning styles.
  • Must be knowledgeable about and capable of using current technologies in the classroom and conveying online course content.
  • Ability to develop effective working relationships with supervisors, co-workers, correctional staff and students, and the college community.
  • Ability to work independently and manage work assignments in a highly interpersonal contact environment.
  • Handle student concerns in an appropriate and approved manner.
  • Ability to think creatively and put ideas into action.
  • Ability to make presentations to a classroom full of students.
  • Personal integrity, honesty, and the ability to maintain confidentiality
  • Understanding the comprehensive mission and philosophy of community colleges.
  • Sensitive issues relating to a diverse student body.

  • Must be willing to work in a correctional institution with inmates and staff
  • Frequent standing and walking to monitor student progress
  • Ability to lift, at times, 20 lbs.; and
  • Good eye/hand dexterity.

Normal Working Hours:
This position may be required to work a maximum of a 16-hour workweek as determined by the director to allow the employee to fulfill the assigned duties and responsibilities, including occasional evening and weekend hours.
