SUMMARY: Assists in maintaining good manufacturing practices (GMP), ensures product specifications are met, and assists in maintaining the overall food safety of product.
ESSENTIAL DUTIES AND RESPONSIBILITIES include, but are not limited to the following: (other duties may be assigned)
Maintain accurate records to assure consistency of product quality, compliance to regulatory agency requirements and documentation of HACCP process.
Maintain accurate records regarding product/process capabilities, USDA situation and HACCP.
Monitor GMP's, SOP's and CCP's.
Must be able to learn all areas of the Quality Assurance Department

EDUCATION and/or EXPERIENCE: A high school diploma or GED is required. A two year or higher college degree is preferred. One or more years experience in meat processing, or closely related industry is preferred.
AUTHORIZED TRAINING REQUIRED: Forklift / Pallet jack, Lockout / Tagout, Fall Protection, Humane Animal Handling, Product Reconditioning, Blood Borne Pathogens, and others as required by the Quality Assurance Supervisor.
LANGUAGE SKILLS: Ability to read and interpret documents in the English language such as safety rules, operating and maintenance instructions and procedure manuals. Ability to write routine reports and correspondence. Ability to effectively present information before groups of customers or employees of the organization. Bilingual skills in Spanish preferred.
MATHEMATICAL SKILLS: Ability to apply mathematical concepts to practical situations. Ability to perform necessary calculations for completion of production paperwork. Use of basic math is required; knowledge of statistical process control is helpful.
REASONING ABILITY: Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form. Must be able to make decisions on routine matters utilizing company policies and procedures and directions from upper management.
NORMAL WORK SCHEDULE: The hours and days of work are established by departmental needs and at the discretion of management. Must be available to work A or B shift when need or as assigned.
- The noise level in the work environment is usually at a level wear OSHA required hearing protection is required.
- WORK ENVIRONMENT: While performing the duties of this job, the employee routinely works near moving mechanical parts and is exposed to wet, cold and/or humid conditions.
- PHYSICAL DEMANDS: The employee must frequently lift and/or move up to 50 pounds and occasionally lift and/or move more than 100 pounds. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.
