Sr. Fish Cutter

Position Summary:

The Senior Fish Cutter helps the Master Fish Cutter in the oversight of the shift processing of fish operations in the Seafood Department for the large-scale production on a 7 day commercial-type operation. Work is performed according to specific NYSDOH and FD policies and procedures according to standardized procedures, ensuring the highest-level quality of product and service provided by our associates while supporting the policies, goals and objectives of the company.

Essential Functions and Working Conditions:

• Follow through and compliance with: Food Safety, GMP's, Safety & Sanitation compliance and FD's Quality policies; as well as ensure that the work area is safe, clean and organized for all team members to work.
• Work in any fish mongering position needed depending on daily production requirements to ensure all production is completed.
• Master of customization, yield and efficient safe speed.
• Demonstrates proper handling and packaging techniques along with proper product dating & labeling for all items associated with tables.
• Ensure accuracy, proper quality standards and specs of all order fulfillment, processing, and production requirements.
• Work with Team Leader, Supervisor, and Manager when issues arise.
• Offer suggestions on how to change and/or make workload easier and more efficient.
• Identify and train talent for the department including coaching, training, and needed material to accomplish that
• Constantly champion quality-focused manufacturing processes by Identifying areas of improvement, implementing best processes and aid in documenting them accordingly with the partnership of Mgmt.
• Inspect and ensure follow through and compliance with: Food Safety, Safety & Sanitation compliance and FD's Quality policies.
• Maintain clean, safe and organized work environment.
• Oversee usage and handling of equipment and machinery used in fish cutting including safety and report all issues immediately.
• Must be able to lift 50 pounds.
• In a workday: standing/walking 6-10 hours or more
• Hand use: single grasping, fine manipulation, pushing and pulling
• Work requires the following motions: bending, twisting, squatting and reaching
• Exposure to FDA approved cleaning chemicals, loud noises, flashing lights
• Constant exposure to temperatures: <-10 degrees Fahrenheit (freezing), 32-40 degrees Fahrenheit (refrigerators)
• Ability to work in a wet and cold environment
• Ability to work a flexible schedule including nights, weekends, and holidays as needed
• Ability to use tools and equipment, including box cutters, electric pallet jacks, and other heavy machinery
• Ability to work in other areas of the business as needed

Minimum Qualifications:

• High School diploma/ and or equivalent and demonstrated capability to perform job responsibilities through previous work experience and education
• 3 plus years in a fish cutting position required
• Bilingual preferred in English and Spanish.

Knowledge, Skills, and Abilities:

• Strong Quality Control and Process Skills.
• Knowledge of production systems software and ability to learn tasks related to work in SAP and WMS.
• Effective time management and prioritization skills, multi-tasking skills in a fast paced environment.
• Proven ability to lead, train and develop a team members.
• Knowledge of fish preparation and presentation methods, techniques, and quality standards.
• Knowledge of department production processes, materials and production techniques.
• Seafood production, sanitation, GMP's, food safety knowledge and HACCP a plus.
• Able to work a flexible schedule/ Cover various shifts.
• Work in a cold environment.
• Able to lift up to 50lbs.
