Sous Chef (Float)
Location: Assisted Living Locations - Riverview Landing (Otsego), Engel Haus (Albertville), and Guardian Angels by the Lake (Elk River)
The Sous Chef will assist the Culinary Manger in culinary and production services to ensure the ongoing delivery of a quality food service program. This position provides supervision to other dietary staff. The Sous Chef provides full-scope, hands on production cooking in a community Culinary Services Department. Is responsible for maintaining a superior level of quality service, and cleanliness at all times. In the absence of the Culinary Manager, the Sous Chef will assume responsibility for the Culinary Services program. Supports and implements all safety practices. Services are provided in accordance with the mission of Guardian Angels. The Float Sous Chef will assist at Guardian Angel's three assisted living facilities, in Elk River, Otsego, and Albertville.

Schedule:
- Full Time, Exempt
- Availability to work every other weekend and occasional evenings and holidays may be required.
Responsibilities:
- Exemplify at all times Community standards of cleanliness, sanitation and operational organization.
- Exhibit leadership, and management standards with all Culinary Services staff.
- Responsible for adhering to food quality, appearance and presentation standards at all times.
- Produce and serve menu cycle programs that are compliant with required Nutritional/Dietary criteria as required by state and federal regulations and correctly prepare diets provided per Policy and Procedure.
- Assists with the hiring, personnel issues, development, supervision and scheduling of Dietary Services staff.
- Ensures that safe food handling and quality service is provided at all times.
- Exhibit cooking standards of speed, accuracy, and efficiency.
- Demonstrate knowledge in all areas of cooking preparation and production.
- Assist with serving of meals and ware-washing as necessary.
- Visit residents periodically to evaluate food service such as quality, quantity, temperature, and appearance; and conducts evaluations to make revisions in operations / procedures to promote improved food service.
- Represent the community in a warm and inviting manner, which creates a positive environment
- To assist in providing a dignified, respectful, resident-centered environment for residents.
- Follows universal precautions, facility infection control guidelines, sanitation and safety standards of practice in all work and activities.
Qualifications:
- Knowledge preparation and line production communication and supervision to cook/prep/dish person/ management staff.
- Knowledge of current food service standards and guidelines in accordance with state and federal regulations.
- Associate degree or certification in food science, nutrition, dietetics or related field preferred.
- SERVSAFE certification or willing to obtain required.
- Minimum 3 years’ experience in a food service industry in a fast paced environment.
- 1 -3 years supervisory experience required.
- Food preparation, ordering, scheduling, and production hands-on experience.
- Knowledge in all areas of local Health Department, OSHA, and other regulatory agencies relative to culinary services
- Good inter-department communication and teamwork skills.
- Basic computer skills required.
- Excellent verbal and written (read, write) communication skills.
- Self-motivated, ability to prioritize.
