REPORTS TO: Executive Chef KEY RELATIONSHIPS: Kitchen Staff, StewardingStaff, F&B Staff Job Details Role: Sake Sommelier Reporting to: GeneralManager and Beverage Director Assist guests with sakeand wine selection, consider their taste and budget when guiding them throughthe menu.

The Sake Sommelier must have a great personality and be able tocommunicate with members and guests that might share different levels of wineknowledge. Primary Job Duties: Duties include, but arenot limited, to the following: Responsiblefor ordering, receiving, inventory, organizing, and selling wine and sake. Workwith culinary team to pair food with sake and wine.

Maintainsake and wine glassware program. Overseeall sake and wine purchases and cost management. Assistguests during the dinner service with sake or wine recommendations andselection for the perfect pairing with their dinner.

Regularly measure and evaluate beverageservice levels and standards using guest and employee feedback and developplans for continuous improvement. Developa training program for all team members to improve their knowledge of sake andwine tasting and service. Trainteam members in order to maximize their understanding of sake and wine andproper service techniques including glassware, pour levels, storage, beveragepairings, and the ability to understand guest preferences.

Ensurethat all sake and wine are served in proper glassware and in proper condition. Maintainall beverage lists to be accurate, up to date, and free of errors. JobRequirements Court ofMaster Sommeliers Certified (Level 2) or equivalent in other accreditedorganizations SakeSommelier Class Certified from the Sake Sommelier Association (SSA) is a plus A minimumof two years of experience in the role Ability tospeak and read Japanese is a plus.

Must bepassionate about sake and wine, must possess superior people skills Theability to determine sake and wine faults and maintain proper temperatures inorder to showcase products at their maximum potential A strongknowledge of food and beverage pairings Solidunderstanding of pricing, budgets, and cost controls.
