Job Description
· Supervise & Organize production crews to expedite daily orders for delivery.
· Supervise & Schedule and organize pasta production, drivers to maximize shipping for all deliveries.
· Supervise Inventory and ordering of spices, flours, coloring agents, eggs, etc., for pasta production including paper goods, packaging material, uniforms, and anything related to pasta production.
· Supervise and develop production procedure.
· Responsible for Production Employees Human Resources.
· Record keeping of HACCP formats.
· Organize and assist employees to maintain work area clean and organized.
· Coordinate with the Inspector In Charge (IIC), as required to maintain USDA plant up to required specifications.
· Supervise assigned Pasta Mia USDA personnel, i.e., time scheduling, clean up forms, days off, etc.
· Cleanness of Production area exceeding U.S.D.A. and Health Dept. standards. Not to exclude: changing rooms, dining rooms, restrooms, walk in freezers, warehouse, etc.
· Dress code and Grooming of employees (pasta production and drivers).
· Weekly scheduling of all direct reports.
· Organize and maintain all areas to meet required sanitation rules and regulations.
· Organize and assign necessary employees to cleaning duty as needed.
· Organize receiving and shipping areas to maximize space and personnel.
· Maintain finished product quality.
· Ensure FEFO procedures are implemented throughout the plant.
· Maintain and establish minimum/maximum par stock.
· Ensure safe temperature of pasta (45 or below).
· Inspect consistency of finished product.
· Inspect quality of all raw ingredients. Contact in house purchaser to contact vendor regarding product.
· Contact clients, at random, to get feedback on product consistency, assist in menu suggestions, item specials, etc.
· Boiler up keep & inspection.
· Document all accidents and report to Management.
· All machines must have operational safety control in place at all times.
· Report to management if any machines have operational problems.
· Follow Safety Procedures, including safety meetings with employees.
· Train new Employees in pasta production.
· Ensure a safe and quality food.
· Responsible for reporting any food safety and quality problems to the proper corrective action supervisor.
· In absence of Production Manager, Plant Manager will be a replacement.
· Anything else deemed necessary by senior management in this area of operation.
Qualifications
• Three (3) to five (5) years related experience in food industry, with a minimum of two (2) in a supervisory role where responsibility was maintained to ensure employees are fully trained and have a complete understanding for the process in which they are functioning.
• Proficiency with Microsoft Outlook. Working knowledge with Microsoft Excel and Word.
• Knowledge of USDA regulations.
• Bilingual (English/Spanish).
• Read and write in English.
• Must be able to lift up to 30 pounds.
• Must be able to stand and/or walk for extended periods of time, in refrigerated environment as well as in cooking areas.
Working conditions/Physical requirements
- Lift and/or move up to 30 pounds and occasionally lift and/or move up to 50 pounds.
- Ability to walk/stand for long periods of time.
- Reach with hands and arms and talk or hear.
- Regularly exposed to wet or humid conditions (non-weather).
- Frequently exposed to work near moving mechanical parts.
- The noise level in the work environment is usually moderate
